2 oranges, 2 apples, 2 bags of fresh cranberries, plus a bit of all spice and sugar to taste. Food processor. Taste. Add more sugar if you think it’s too tart. Stir. Taste again. Perfect. Cover and refrigerate overnight. Simple and delicious.
- 2 oranges, peeled, pith removed, chopped
- 2 apples, such as gala or fuji, cored, roughly chopped (no need to peel)
- 24 ounces of fresh cranberries (if frozen, thawed)
- ½ tsp all spice
- ½ -2/3 cup sugar
- Combine fruit, all spice, ½ cup of sugar.
- Put ingredients in food processor or use emulsion blender to finely chop ingredients. Taste. Add sugar if you think it's too tart. Stir to combine or reprocess if large pieces of fruit remain.
- Refrigerate until ready to serve. Flavors will develop more overtime. Relish can be made 1-3 days ahead of time.
This recipe has become a Thanksgiving standby for our family over the last few years. It is fun getting to start new traditions as a young family. I love that it is simple and has fresh ingredients especially when many traditional Thanksgiving foods tend to be rich and heavy. Another bonus is that you can make it ahead of time so it won’t take up your time on Thanksgiving day.
I hope you take this time to enjoy the special foods that are brought out at Thanksgiving time. Enjoy the foods you love and feel no guilt over eating them. It is one day out of many. Remember the bigger picture when it comes to balancing a healthy diet. Find time to reflect on what you appreciate in life and tell others how much they mean to you.
Wishing you a very Happy Thanksgiving!
