When was the last time you tried a new vegetable? Since participating in our local CSA, I have been able to try several new foods. Most recently, I had the opportunity to try cooking with bok choy. It is a type of leafy green typically found in Asian dishes like stir-fry or it can be simply roasted. It is also easily added into soups like the featured recipe below, Bok Choy & Chicken Soup.

Roasting vegetables in the oven can make the same ol’ veggies come alive with new flavor! This makes it easier to get in the recommended 2 ½ cups of vegetables a day. Roasting brings out a flavor you do not get from steaming alone, plus they are much easier to eat roasted rather than raw.

Make healthy choices available during fun celebrations to reinforce the healthy eating messages you’ve been trying to establish with your kids. Serve the healthy items right alongside the special treats. Then let kids decide what they want to try. If you serve it, they should be able to eat it. So if there is something you’re serving that you don’t really want them to eat, why even make it an option?
