Red, White, and Blue Recipes

Fourth of July is quickly approaching and perhaps you’ve been invited to a party that you need to take a dish to. Or in my case I’m still waiting to be invited to a party. So instead of throwing myself a pity party I decided to throw my own Fourth of July party. With the help of the Internet and my inner Martha Stewart I came up with two red, white, and blue themed recipes. A dessert and a salad that is quick, tasty and nutritious. Have a safe and fun Fourth of July.
Red, White, and Blue Spinach Salad

Ingredients
- 1 (9 ounces) package fresh baby spinach
- 1 (4 ounces) package crumbled feta cheese
- 1 cup dried cranberries
- 1 cup walnut pieces
- 1/2 cup honey Dijon vinaigrette
Directions
In a large salad bowl, combine the spinach, feta cheese, cranberries and walnuts. Drizzle with vinaigrette; toss to coat.
Red, White, and Blue Parfait
4 servings

Ingredients
- 1 8-ounce prepared angel food cake
- 2 cups raspberry low-fat yogurt
- 1 cup blueberries
- 1 cup chopped strawberries
Directions
- Cut angel food cake into one-inch cubes. Set aside.
- Spoon 1/4 cup of the yogurt into the bottom of a parfait serving glass.
- Add 1/4 cup blueberries, followed by 1/4 of the angel food cake cubes, 1/4 cup of strawberries, followed by another 1/4 cup of yogurt.
- Repeat for the remaining three glasses.
