Fruits and vegetables are like a pot of gold at the end of the rainbow when it comes to eating. They provide many flavors, textures and aromas. Eating a variety of colorful fruits and vegetables provides needed vitamins, minerals and nutrients for good nutrition and health. Research indicates that people who eat more fruits and vegetables have reduced risk of some chronic diseases.June is rightly called National Fruit and Vegetable Month. Spring vegetables and fruits are a welcome change after winter. With the new birth of baby animals, spring rains and the first sprouts of green, it is only appropriate to renew the body’s cells with a refreshing recipe. Try a Rainbow Smoothie – so refreshing on warmer days!

Rainbow Smoothie
Ingredients
- ½ cup each 3 vegetables in a variety of colors
- ½ cup each 2 fruits in different colors
- ½ cup plain yogurt, milk or water
- Ingredient Tips:
- Use 5 different colors of fruits and vegetables. You can use fresh or frozen fruits and vegetables. Using at least one frozen fruit or vegetables makes the smoothie refreshing!
- Baby spinach and romaine are mild tasting greens to use for people newly trying green smoothies.
Instructions
- Chop fruit and vegetables into about 1” pieces.
- Place all ingredients in a blender. Blend on high speed until smooth. If needed, stop the blender to push pieces from the edges down into the liquid.
- Serve in a chilled glass and garnish with a chunk of fruit or leaf. Or fill a travel sipper for an on-the-go breakfast or snack.
