Gardening with Child Care Children

We did it!  We won the Welch’s Harvest Grant from Welch’s, as part of a program with Scholastic and the National Gardening Association.  We received $500 worth of gardening equipment and curriculum to start raised beds at St. Bernard’s Child Care in Omaha.  We are working with two horticulturists and a master gardener from the UNL Extension Office, and myself, and RD.  The kids are going to raise veggies this summer, and learn that food comes from somewhere besides the

Teaching Cooking IS Important!

I teach healthy eating concepts.  I am a dietitian.  I believe you cannot teach nutrition without discussing food preparation!  This has been a missed concept for many years by many nutrition experts.   Probably why we have been nicknamed food Nazi’s!  All foods do fit, and cooking IS important! I teach numerous cooking classes yearly—to all ages—kids through retired adults.  All participants have one thing in common—they must eat—and they require something that tastes good, and is good for them.  So I
