Recipe ReDux – Frito-Lay® Challenge

Frito-Lay® challenged Recipe ReDuxers to develop main dishes, appetizers and/or side dishes for individuals with celiac disease or other gluten intolerance’s. The key was to use at least one Frito-Lay® gluten-free product as an ingredient in the recipe or paired with the recipe.

 

 

 

 

 

 

 

When I started to think about this challenge, I wanted to make something more than a dip with a side of chips. It finally occurred to me that a side dish my mom used to make would be the perfect starting point. The original dish, called ‘Onion Pie’ had a base of saltine crackers – why couldn’t I use LAYS® Classic Potato Chips as the base. I also took a serious look at the rest of the ingredients. That was when I decided  I like the thought of comfort food, but not the comfort that the original recipe was high in calories, fat and sodium. It took some time but I modified my original recipe into a healthier alternative.  Hopefully you will enjoy this dish as much I do.

Modified Recipe for Onion Pie                                 Original Recipe for Onion Pie

 

2 oz (30 chips) LAYS® Classic Potato Chips2 cups sliced onions1 tsp margarine

1 cup milk

4 egg whites

½ cup sharp cheddar cheese, shredded

Pepper to taste

 

100-107 calories

4-5 g fat

2 g saturated fat

8 mg cholesterol

94-110 mg sodium

8-9 g carbohydrates

1 g fiber

5 g protein

1 cup crushed saltine crackers + ¼ cup butter2 cups sliced onions1 Tbsp butter

1 cup milk

2 eggs, beaten

1 cup cheese, shredded

Salt and pepper to taste

 

175 calories

12 g fat

7 g saturated fat

90 mg cholesterol

199 mg sodium

8 g carbohydrates

0 g fiber

7 g protein

Instructions for Modified Recipe:

Preheat oven to 350°F. Place chips in 9-inch pie plate; slightly crush. Take sliced onions and sauté in margarine until wilted. Place onions on top of chips. Mix together milk, egg whites and pepper. Pour over onions. Sprinkle shredded cheese over other ingredients. Bake for 30-35 minutes in 350°F oven. Serves 8.

  1. Wanted to mention not all margarine is gluten-free; check source before using. Also, make sure to buy whole cheese and shred it yourself. Pre-shredded cheese can sometimes contain gluten, which is added to keep cheese shreds from binding to each other.
