No Bake Desserts (Recipe Redux)

When I read what the topic was for this months Recipe Redux feature, there were many no-bake items that came to mind. And I am sure that my fellow Recipe Redux Blog contributors will have a wide spectrum of no- bake desserts to share. But the one recipe that came to mind was a recipe that my Grandmother used to make at the holidays and a tradition that my Mother has continued into my adult life. Here is the written recipe that I acquired in closing of the estate to my Grandparents home many years ago.
This Cherry Dessert Recipe, I am guessing, probably came from the back of a box. You know what I mean one that a manufacturer develops in their office to promote the sale of their item. I am not sure if it was the graham cracker crumbs box, or possibly the cherry pie filling. When the recipe was developed all of the ingredients were probably full fat and sugar, which I am sure is what my Grandmother used. Lucky today we have ingredients that you can choose to use that are lower in fat and sugar, to make this healthier to the original recipe. You can purchase cream cheese and frozen whipped topping that is lower in fat and sugar. I have used a variety of the healthier ingredients and not once have I been disappointed in the the results. I have also decreased the amount of butter and sugar in the crumb mixture.
Traditionally this dessert is made and served in a 9 x 13 inch pan. But for this blog I decided to experiment and see how they would work out in a variety of long and short stem glasses. Depending on the size of the glass the portion size is pretty much on spot what people would generally dish out for themselves or smaller. I think that I will try shot glasses the next time I make these, the portion size will be much smaller and one recipe will spread farther than in these beautiful glasses.
