Healthy Lunchtime Challenge

The 4th Annual Healthy Lunchtime Challenge is currently underway! Kids 8-12 years of age are invited to join a parent or guardian in creating an original MyPlate – inspired recipe that is healthy, tasty, and affordable. One winner from each U.S. state, territory and the District of Columbia will be selected and have the opportunity to attend a Kids’ “State Dinner” at the White house this summer where a selection of the winning recipes will be served. - 1 Tbsp vegetable oil
- 1 lb ground turkey
- 2 tsp chili powder
- 1½ tsp paprika
- ½ tsp salt
- ½ tsp cumin
- ½ tsp oregano
- ¼ tsp black pepper
- pinch of cayenne pepper
- 6 whole wheat soft tortilla shells
- Garnish: shredded low-fat Colby Jack cheese, romaine lettuce, diced tomatoes, and avocados
- In a large saute pan, warm the oil over moderate heat. Add the turkey and cook for 5 minutes, breaking up with a wooden spoon until crumbly. In a small bowl, mix all of the seasonings and ½ cup water. Add to the turkey and simmer for 10 minutes, or until the turkey is cooked through. Warm the tortillas in microwave. Serve with the turkey mixture and all of the garnishes. Roll up and enjoy!
