Cindy’s Garden–The Fall Chapter

My garden has flourished in the last two weeks. I went out last evening and found cucumbers growing! I did my little happy dance, and am looking forward to having both of them this weekend. Yeah-there are just two-but hey-they grew in MY garden! The tomatoes have slowed and the herb garden has gotten way out of hand.
My squash and zucchini plants look terrific. So do my carrots! Too bad that by the time they actually grow big enough to eat-it will be Christmas! Oh well.
What have I learned? I really don’t mind feeding the wildlife in my backyard. I enjoy gardening, and have actually enjoyed many meals of home grown tomatoes and basil. I will dehydrate my herbs and lavender before frost-and enjoy them all winter. I will plant again next year-but promised the kids we’d grow pumpkins. I wonder if rabbits and wood chucks eat pumpkin plants?
If you have extra tomatoes in your garden, give this recipe from Penzeys Spices a try. It is quick to make and is delicious. You can make it healthier by using fat-free ingredients.
