Making Healthy Eating a Reality:What to Do with Your Leftover Turkey?

As Thanksgiving approaches, we all get excited to enjoy a traditional meal with family and friends. The smells of turkey, stuffing, mashed potatoes, green bean casserole, fresh bread, and pumpkin pie bring smiles to our faces. But by the third day after Thanksgiving when you are still eating leftover turkey, those smiles are sometimes turned upside down…reheated turkey again.Let’s get those smiles back! Turkey soup is a great way to use the leftover turkey in a way your family will love. Soup served with some fresh bread makes a very satisfying and tasty meal. Soup is a healthy one pot meal providing at least ½ cup of vegetables per serving. What I love about these soups (besides the taste!) is that they are super easy recipes. I can put a delicious meal on the table with little effort.

FOOD SAFETY NOTE: Remember leftover turkey can only be stored in the refrigerator for 3 to 4 days. Any longer and it needs be stored in the freezer. You can measure out the amount of turkey you need for these soups and place in freezer bags. Store in the freezer and you’ll be all set to make the soup whenever you want.
