5 Easy Meals from Crockpot Chicken

It is probably just me but every time I bake chicken breasts in the oven, I overcook them, leaving them dry and chewy.  So recently I decided to try cooking bone in chicken breasts in my crockpot.  I set the crockpot for either 4 or 6 hours depending on the day.  I add a 1/2 cup of water to the crockpot; add the chicken and season with salt and pepper.  Sometimes I will add minced garlic, basil, oregano, or red pepper depending on what I am making.  I was so excited the first time I made it because it turned out great.  It was moist and had a great flavor.  Most importantly it was easy and fast.

From the crockpot chicken I have discovered how quickly I can whip up different meals.  Even my four-year-old told me it was the best chicken he has ever eaten.  Okay he is only four but he is often my biggest critic.  My favorite meals to make from the crockpot chicken are:  Manicotti, BBQ sandwiches, Shredded Chicken Tacos, Stir Fry, and Chicken & Noodles.  Click on the highlighted words or pictures to view the recipes.

Manicotti Manicotti – I just use the recipe on the box of Barilla Manicotti Shells and add diced chicken.
BBQ sandwichs – I add BBQ sauce to shredded or diced chicken and place it on a hamburger bun or piece of bread.  Then I add a slice of mozzarella cheese on top and place it in the microwave or oven to melt the cheese. Optional: garnish with onion, tomatoes, or parsley.
Shredded Chicken Tastadas – I loosely use a recipe from Old El Paso.  There are many more fun recipes on the Old El Paso website.
Chicken Stir Fry – I add the chicken to Uncle Ben’s “Ready Rice,” and mixed vegetables (broccoli, carrots, snap peas, and water chestnuts).
Chicken & Noodles – I use a recipe from my favorite recipe web site, AllRecipes.com.
