Some Like It Hot!

The Recipe Redux challenge this month was to showcase our favorite spicy recipe.  Here is the exact idea:

“The New Year is heating up with smoke and spiciness. From boldly flavored smoked salts to actual smoking techniques, subtly smoked food is on-trend. The same can be said for spice as we savor heat from harissa, sriracha and smoked paprika. Show us the healthy dish you’re heating up with smoke and/or spiciness.”

I am a woman with little time, but love great tasting foods!  So I believe simple is best.  My recipe is a go-to one that I use periodically on busy basketball/soccer/play practice nights when we have 30 minutes to make dinner, eat, and leave again.  Hope you like it!

Eggs A La Cindy

  • 6 large eggs
  • 4 egg whites (the yolks are cooked for the dogs)
  • 2 tablespoons skim milk
  • 1/2 cup sautéed mushrooms (canned will do in a hurry–drain)
  • 1/2 sautéed onion or chopped green onions
  • 1 teaspoon Ancho chili powder
  • 1/2 cup low-fat sharp cheddar cheese

Sautee onions and mushrooms for a few minutes, then remove.  Mix eggs, egg whites, milk and chili powder together.  Pour into the hot skillet that has sautéed the onions and the mushrooms.  Stir gently until almost set, then add mushrooms and onions back in.  Finish with cheddar cheese.  Let sit in skillet with hit off until cheese melts.  Serve wth fruit and you have dinner!  (Or breakfast!).
