Bountiful Produce!

 

 

 

 

 

 

This time of the year always befuddles me!  It’s either feast or famine–and right now it’s FEAST!!!!  I picked up and incredible bag of produce from Wenninghoff’s CSA, and my garden is producing like crazy.   I brought in all of my goodies and cleaned everything up–there seemed to be no more room in my kitchen to place any more delectable veggies!  So, by process of elimination, I started using them!

I have been eating tomatoes on everything–chopped with cucumbers and a little low-fat ranch is great!  On top of a slice of Italian bread with a little melted cheese is called lunch in our house!  By themselves with a little flake salt works!  On any sandwich or grilled cheese works too?  What a great source of Vitamin C.  Pico and salsa are also family favorites.

My family likes green beans steamed.  To death.  Really.  I learned while in college MANY years ago that vegetables should be crisp, yet tender.  Not so much with my family.  I like them in soups and stews and roasted with a little balsamic vinegar too!  More on roasting later.

My son loves to garden–and is always picking fresh produce for me.  Our cucumbers are starting to die–but still getting enough for salads and to eat by themselves.  A little bit of Ranch on them is good too!  Potatoes did terrific this year.  I placed some smaller ones in a foil wrap and placed them on the grill with a little garlic and olive oil.  They were terrific.  Placed in the crock pot with fresh rosemary and a little teriyaki glaze and garlic is terrific too!18 19 20

Beets, squash and melons–oh my!  We like beets cooked or roasted in a hot very with a little bit of oil and seasoning.  It brings out their incredible flavor.  Squash chunked and roasted the same way is also great!  Melons by them selves are so sweet!  Have you tried chunking them up and freezing them.  Serve over yogurt!  So good!!

Eggplant is doing well along with zucchini.  I love shredding my zucchini and freezing it for use later this fall, or making zucchini boats with stuffing in the middle in the oven.  They taste so great!
