{"id":9414,"date":"2013-09-26T08:00:35","date_gmt":"2013-09-26T08:00:35","guid":{"rendered":"http:\/\/www.nutritionknowhow.org\/blog\/?p=9414"},"modified":"2013-10-24T16:04:50","modified_gmt":"2013-10-24T16:04:50","slug":"pick-a-pepper","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/c\/pick-a-pepper\/","title":{"rendered":"Pick a Pepper"},"content":{"rendered":"<p>This week in the <a title=\"Community Supported Agriculture\" href=\"http:\/\/www.nutritionknowhow.org\/blog\/c\/9141\/\">CSA<\/a> bag was huge bell peppers.\u00a0 Peppers are usually classified as bell, also known as sweet (mild) or pungent (hot).\u00a0 They are available in various shapes, sizes, and colors.\u00a0 Depending on the variety of pepper the color can be green, red, orange, yellow, and more rarely, ivory, brown, white, lavender and dark purple.\u00a0 Most typically, unripe bell peppers are green and most red peppers are ripened green peppers.\u00a0 Green bell peppers are less sweet and more bitter tasting than yellow, orange and red peppers. \u00a0Red peppers are the sweetest tasting.\u00a0 Bell peppers are high in vitamins A and C.\u00a0 Red peppers are the highest in vitamin C and contain the antioxidant lycopene.<\/p>\n<p>Often times when I teach kids about vegetables I\u2019ll bring slices of red, yellow and green peppers.\u00a0 I offer Ranch dressing for them to dip it in; this really motivates the kids to try it.\u00a0 Many kids have never tried red or yellow peppers and are surprised by how much they like them.<\/p>\n<p>I include bell peppers into many of my family\u2019s favorite meals: pizza, stir fry, fajitas, omelets, casseroles,\u00a0<a title=\"Stuffed Peppers\" href=\"http:\/\/www.nutritionknowhow.org\/blog\/c\/stuffed-peppers\/\">stuffed bell peppers,<\/a>\u00a0<a title=\"Refreshing Summer Salads\" href=\"http:\/\/www.nutritionknowhow.org\/blog\/c\/refreshing-summer-salads\/\">salads<\/a>, and\u00a0<a title=\"Tasty Ways to Use Up Cucumbers\" href=\"http:\/\/www.nutritionknowhow.org\/blog\/e\/tasty-ways-to-use-up-cucumbers\/\">salsa<\/a>.<\/p>\n<p><a style=\"font-family: Arial, Helvetica, sans-serif; font-size: 15px; font-style: normal;\" href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/stuffed-green-peppers.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-9417 alignleft\" alt=\"stuffed-green-peppers\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/stuffed-green-peppers-300x199.jpg\" width=\"300\" height=\"199\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/stuffed-green-peppers-300x199.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/stuffed-green-peppers.jpg 500w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<div class=\"easyrecipe\">\t<link itemprop=\"image\" href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/stuffed-green-peppers-300x199.jpg\" \/>\n<div class=\"item ERName\">Cathy&#8217;s Stuffed Peppers<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 cup cooked rice<\/li>\n<li class=\"ingredient\">3 bell peppers (cut off the stem and take out the seeds)<\/li>\n<li class=\"ingredient\">1 lb. lean ground beef<\/li>\n<li class=\"ingredient\">1\/2 small onion, chopped<\/li>\n<li class=\"ingredient\">mushrooms, wiped clean with damp cloth, sliced<\/li>\n<li class=\"ingredient\">marinara sauce<\/li>\n<li class=\"ingredient\">Parmesan cheese (optional)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Cook rice according to package directions.<\/li>\n<li class=\"instruction\">While rice is cooking, brown the ground beef and chopped onion. Season to taste with salt and pepper.<\/li>\n<li class=\"instruction\">While beef is cooking, clean and slice mushrooms. Note: Mushrooms should be cleaned with a damp cloth, not under running water as they absorb water.<\/li>\n<li class=\"instruction\">After beef is cooked, remove from pan and add mushrooms to pan. Add olive or canola oil to pan if needed to saute mushrooms.<\/li>\n<li class=\"instruction\">While mushrooms are cooking, assemble the peppers in a greased baking dish.<\/li>\n<li class=\"instruction\">Once all items are cooked, stir together rice, meat and mushrooms. Spoon mixture into peppers. Cover with marinara sauce. Pour a small amount of water to cover the bottom of the pan. Cover with foil. Bake at 350 degrees for about 30 minutes. Remove foil and sprinkle with your Parmesan cheese if desired.
