I had just pulled a recipe out of my favorite Penzy\u2019s catalog for zucchini\u2014so I thought I would try that!\u00a0 It was a terrific recipe.\u00a0 I left out the ingredients that weren\u2019t staples at my house, like the coconut and the nuts, but would add them next time!\u00a0 Give these a try\u2014you will not be disappointed.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-9243 aligncenter\" style=\"border: 3px solid black; margin-top: 3px; margin-bottom: 3px;\" alt=\"September blog 018\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/September-blog-018-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/September-blog-018-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/September-blog-018-1024x768.jpg 1024w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/September-blog-018.jpg 1600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<\/div>\n<p>What I did with the rest was simple.\u00a0 I cut up the peppers, cucumber and green beans to take to a football game party with Chipotle dip.\u00a0\u00a0 Fresh veggies are always good.\u00a0 It balances the higher fat stuff! I boiled the beets, peeled them and sliced them up.\u00a0 My family likes them plain with a little bit of butter.\u00a0 I am still thinking about roasting them with a little olive oil\u2014but will see what tonight brings!<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/September-blog-024.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" style=\"border: 3px solid black; margin-top: 3px; margin-bottom: 3px;\" alt=\"September blog 024\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/09\/September-blog-024-300x225.jpg\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>The spaghetti squash was used as a test.\u00a0 The last time I cooked spaghetti squash\u2014it blew the microwave door open!\u00a0 If you cook it whole, wash it well with cold running water\u2014then puncture it with a knife\u2014DEEPLY!\u00a0 You really want to let steam out of the middle.
