The recipe was a way to\u00a0teach about\u00a0in season fresh fruits and vegetables and allow people to try them in a way they may not have tried on their own. \u00a0I make two recipes a quick salsa and salad. These recipes are a great way to use fresh ingredients with minimal preparation time and zero cooking!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Summer Corn Salsa<\/strong><b><br \/>\n<a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/08\/food-bank-demo-pic.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-8956 alignleft\" alt=\"food bank demo pic\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/08\/food-bank-demo-pic-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/08\/food-bank-demo-pic-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/08\/food-bank-demo-pic.jpg 513w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n<\/b><\/p>\n<div align=\"center\">\n<table style=\"width: 100%;\" border=\"0\" cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td valign=\"top\" width=\"50%\">\n<p style=\"text-align: left;\" align=\"center\">6 ears freshly shucked corn<br \/>\n1 green pepper, diced<br \/>\n2 Roma (plum) tomatoes, diced<br \/>\n1\/4 cup diced red onion<br \/>\n1\/2 bunch fresh cilantro, chopped<br \/>\n2 teaspoons olive oil<br \/>\nsalt and black pepper to taste<\/p>\n<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">\n<p style=\"text-align: left;\">1. Cook the corn on the grill, turning occasionally, until the corn is tender and specks of black appear, about 10 minutes (right of the cob with no cooking will also work!); set aside until just cool enough to handle. Slice the kernels off of the cob and place into a bowl.<\/p>\n<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">\n<p style=\"text-align: left;\">2. Combine the warm corn kernels with the green pepper, diced tomato, onion, cilantro, and olive oil. Season with salt and pepper; toss until evenly mixed. Set aside for at least 30 minutes to allow flavors to blend before serving.<\/p>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<\/div>\n<p><b>Cucumber Cantaloupe Salad<br \/>\n<\/b><\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/08\/cucumber-cantaloupe-salad.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-8955 alignleft\" alt=\"cucumber cantaloupe salad\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/08\/cucumber-cantaloupe-salad-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/08\/cucumber-cantaloupe-salad-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/08\/cucumber-cantaloupe-salad.jpg 550w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"color: #000000;\">\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><b>2 large c<\/b><b style=\"font-family: inherit; font-style: inherit;\"><\/b><b>ucumbers, diced\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/b><b>1 small red onion(or whatever you have!), chopped<br \/>\n<\/b><b>3 cups cantaloupe, diced \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a01 medium tomato, chopped<br \/>\n<\/b><b>1 tablespoon extra-virgin olive oil\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 bunch cilantro, chopped<br \/>\n<\/b><b>Salt and pepper to taste \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0Juice of one lime<\/b><\/p>\n<p><b><\/b>1. In a large serving bowl, lightly mix together the cucumbers, cantaloupe, olive oil, jalapeno pepper, lime juice, lime zest, red onion, tomato, cilantro, salt, and pepper. Cover the bowl with plastic wrap, and chill in the refrigerator for at least 2 hours to let the flavors blend<\/p>\n<p><b>Everyone was very receptive to trying the new recipes and many people asked about the dressing that was on them. That\u2019s the best part\u2026 it is just fresh lime juice and herbs! These recipes are great for entertaining in your home or for a fresh addition to a meal.
