{"id":5072,"date":"2013-05-01T21:33:34","date_gmt":"2013-05-02T03:33:34","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=5072"},"modified":"2013-08-06T13:48:44","modified_gmt":"2013-08-06T13:48:44","slug":"cooking-is-a-lost-art","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/c\/cooking-is-a-lost-art\/","title":{"rendered":"Cooking is a Lost Art!"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>I have been attending the most terrific Dairy Symposium today and looking forward to tomorrow!\u00a0 This afternoon, everyone visited a local family dairy farm and learned all about what it takes to get milk from the farm to your glass.\u00a0 Pretty interesting stuff!<\/p>\n<p>Tonight, we all got to go to The Culinary Center in Kansas City, and we all prepared our dinner meal.\u00a0 This may sound dreadful to some who do not like to cook.\u00a0 But it wasn\u2019t.\u00a0 It was exactly how meals should be prepared.\u00a0 We prepared and entire meal and every group prepared a different recipe.\u00a0 Wine was served and we noshed on appetizers while we cooked.\u00a0 My point is that cooking should be FUN!\u00a0 I know the day to day preparation of family meals gets old sometime, but it can be fun!<\/p>\n<p>We all like to eat, but we don\u2019t always eat what our bodies need.\u00a0 I am NOT a food Nazi.\u00a0 I believe all foods can fit.\u00a0 I also believe if we, as dietitians want to get people to eat healthier, we need to teach them to prepare healthy foods that taste good and are easy to prepare.<\/p>\n<p>Cooking is a lost art in this day and age.\u00a0 I read a statistic yesterday from the American Dietetic Association that said 75% of people learn to cook from some type of electronic source.\u00a0 Hmmmm\u2026\u2026. Where did learning to cook from your Mom or Grandma go?<\/p>\n<p>So\u2014I am including a great recipe a friend sent me on Facebook.\u00a0 It\u2019s not hard, and tastes incredible!\u00a0 Give it a try.\u00a0 Look forward to more incredible recipes soon, as we signed up for our CSA again, and are all looking forward to fresh, tasty produce again!<\/p>\n<p>Crisp Cucumber Salsa<br \/>\nYield 2-1\/2 cups<\/p>\n<p>2 cups finely chopped seeded peeled cucumber<br \/>\n1\/2 cup finely chopped seeded tomato<br \/>\n1\/4 cup chopped red onion<br \/>\n2 Tbsp minced fresh parsley<br \/>\n1 jalepeno pepper, seeded and chopped<br \/>\n4-1\/2 tsp minced fresh cilantro<br \/>\n1 garlic clove, minced or pressed<br \/>\n1\/4 c reduced-fat sour cream<br \/>\n1-1\/2 tsp lemon juice<br \/>\n1-1\/2 tsp lime juice<br \/>\n1\/4 tsp ground cumin<br \/>\n1\/4 tsp seasoned salt<br \/>\nTortilla chips<\/p>\n<p>In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat.
