{"id":4919,"date":"2013-04-01T12:01:13","date_gmt":"2013-04-01T18:01:13","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=4919"},"modified":"2013-08-08T19:16:52","modified_gmt":"2013-08-08T19:16:52","slug":"the-week-of-the-egg","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/b\/the-week-of-the-egg\/","title":{"rendered":"The Week of the Egg"},"content":{"rendered":"<p>This post was written by Kimberly Wolfer, a UNL Dietetic Intern:<\/p>\n<p>I hope everyone had an EGGcellent Easter!\u00a0 I spent the day with family and friends.\u00a0 As expected, we participated in all of the customary activities typical of Easter Sunday.\u00a0 We ate too much candy and dyed too many eggs.\u00a0 But now the egg hunt is over, and my refrigerator is loaded with hard-boiled eggs.\u00a0 Here are a few recipes that will be on the menu at my house this week!\u00a0 Food Safety Reminder: Hard boiled eggs\u00a0need to be\u00a0be refrigerated.<\/p>\n<p>Broccolini with Hard-Boiled Eggs<strong><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" title=\"Broccolini with Egg\" alt=\"Broccolini with Egg\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/03\/dfeta-egg.jpg\" width=\"297\" height=\"209\" \/><\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 bunches Broccolini<\/li>\n<li>1 Hard-Boiled Egg (Chopped)<\/li>\n<li>Salt<\/li>\n<li>1 Shallot (Minced)<\/li>\n<li>3 tbsp. Olive Oil<\/li>\n<li>Pepper<\/li>\n<li>2 tbsp. White Wine Vinegar<\/li>\n<li>2 tbsp. Whole-Grain Mustard<\/li>\n<\/ul>\n<p>Directions:\u00a0 Boil broccolini in salted water for 4 minutes.\u00a0 Drain.\u00a0 Shock in ice water.\u00a0 Pat dry.\u00a0 Whisk salt, shallot, olive oil, pepper, white wine vinegar, and whole-grain mustard.\u00a0 Drizzle over broccolini.\u00a0 Top with hard-boiled egg.<\/p>\n<p>Guacamole Deviled Eggs<strong><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" title=\"Guacamole Deviled Eggs\" alt=\"Guacamole Deviled Eggs\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/03\/deviled-eggs.jpg\" width=\"223\" height=\"260\" \/><\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 Avocado<\/li>\n<li>1\/8 tsp. Chile Powder<\/li>\n<li>1 tbsp. Fresh Cilantro (Chopped)<\/li>\n<li>6 Hard-Boiled Eggs<\/li>\n<li>1 tbsp. Jalapeno (Minced)<\/li>\n<li>2 \u00bd tsp. Lime Juice<\/li>\n<li>Pepper<\/li>\n<li>1 tsp. Red Onion (Minced)<\/li>\n<li>Salt<\/li>\n<li>1 tbsp. Tomato (Diced)<\/li>\n<\/ul>\n<p>Directions:\u00a0 Peel hard-boiled eggs.\u00a0 Cut eggs in half horizontally.\u00a0 Set yolks aside.\u00a0 In a small mixing bowl, mash avocado and 2 egg yolks.\u00a0 Discard remaining egg yolks.\u00a0 Add cilantro, jalapeno, lime juice, pepper, red onion, and salt.\u00a0 Mix well.\u00a0 Add tomato.\u00a0 Stir gently.\u00a0 Scoop guacamole into egg white halves.\u00a0 Sprinkle with chile powder.<\/p>\n<p>Roasted Asparagus with Garlic-Lemon Sauce<strong><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" title=\"Roasted Asparagus\" alt=\"Roasted Asparagus\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/03\/dasparagus-egg.jpg\" width=\"274\" height=\"257\" \/><\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 Anchovy Fillets (Minced)<\/li>\n<li>2 lb. Asparagus (Trimmed)<\/li>\n<li>1 clove Garlic (Minced)<\/li>\n<li>2 Hard-Boiled Eggs (Chopped)<\/li>\n<li>1 tbsp. Lemon Juice<\/li>\n<li>2 tbsp. Low-Fat Mayonnaise<\/li>\n<li>2 tsp. Olive Oil<\/li>\n<li>2 tbsp. Parmesan Cheese (Shredded)<\/li>\n<li>1\/8 tsp. Salt<\/li>\n<li>2 tbsp.
