{"id":4848,"date":"2013-03-14T20:13:21","date_gmt":"2013-03-15T02:13:21","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=4848"},"modified":"2013-08-06T20:05:16","modified_gmt":"2013-08-06T20:05:16","slug":"the-life-of-a-dumper","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/e\/the-life-of-a-dumper\/","title":{"rendered":"The Life of a \u201cDumper\u201d"},"content":{"rendered":"<p>Guest blog by Rachel Wright<\/p>\n<p>I follow recipes, sort-of, but then I \u201cdump\u201d a few goodies in there.\u00a0 I followed recipes like the basic pancake recipe found in the red and white Better Homes and Gardens cookbook I got when we first got married. It is complete with written notes and stained\/spills, but it is the BEST cookbook I have ever had.<\/p>\n<p>I have my 3- and 4- year old help me cook.\u00a0 They think it is fun and sometimes messy, but a special time together.\u00a0 The pancake recipe works well when cooking with my kids because you have one mix the dry ingredients in one bowl and the wet ingredients in a different one.\u00a0 Two kids, two bowls, there is less fighting\u2026most of the time.<\/p>\n<p>Once the basic recipe is complete, I can\u2019t help but \u201cdump\u201d a bit.\u00a0\u00a0 This time I decided to dump a little bit of vanilla, and of course, some flax seed.\u00a0\u00a0 Flax seed helps me add some omega-3 fatty acids (&#8220;good&#8221; fats that has been shown to have heart-healthy effects) as well as antioxidants and fiber! \u00a0\u00a0 I don\u2019t measure, I simply let the kids dump a little ground flax see in there, they don\u2019t know the difference (although my husband always can\u2026 sorry honey!).<\/p>\n<p>We have had days when I let them put a few chocolate chips on them before I flip them or use metal cookie cutters to make special shapes.\u00a0\u00a0 As you start to \u201cdump, don\u2019t worry; there will be some \u201cDumping Disasters.\u201d \u00a0I might never live down the time I put smashed up bananas in them.\u00a0 I was going for a \u201cbanana bread\u201d type pancake\u2026I failed miserably!!!\u00a0\u00a0 Enjoy letting your kids experiment with you (if they are truly awful, there is always cereal).<\/p>\n<p>Here is the Wright family\u2019s basic Pancake recipe, adapted from the Better Homes and Gardens Cookbook:<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/03\/DSC_2962-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-4851\" style=\"border: 3px solid black; margin: 3px;\" title=\"DSC_2962 (2)\" alt=\"\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/03\/DSC_2962-2-267x400.jpg\" width=\"267\" height=\"400\" \/><\/a><\/p>\n<p>Pancakes<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>2 cups\u00a0all-purpose flour<\/li>\n<li>2 tablespoon\u00a0sugar<\/li>\n<li>1 Tablespoon and 1 teaspoons\u00a0baking powder<\/li>\n<li>1\/2 teaspoon\u00a0salt<\/li>\n<li>3 beaten eggs<\/li>\n<li>2 cups\u00a0milk<\/li>\n<li>\u00bc cup cooking oil<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>In a medium mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the center of the dry mixture; set aside.<\/li>\n<li>In another medium mixing bowl combine the egg, milk, and cooking oil. Add egg mixture all at once to the dry mixture. Stir just till moistened (batter should be lumpy).<\/li>\n<li>For standard-size pancakes, pour about 1\/4 cup batter onto a hot, lightly greased griddle or heavy skillet. (a 2\/3 cup measuring spoon filled part way works great). Cook over medium heat about 2 minutes on each side or till pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.
