or show, the first thing that came to mind was \u201csitting around the campfire eatin\u2019 some beans.\u201d\u00a0 I am not sure what movie this phrase came from, but it\u2019s been a private funny joke in our family for many years.\u00a0 Every time we eat any form of beans, it is song at the table!<\/span><\/div>\n<div><\/div>\n<div>\n<p>\u00a0Beans are such a healthy food and so versatile!\u00a0 They can be used in sweet and savory dishes.\u00a0 My family LOVES beans in any form.\u00a0 Some of our favorite recipes involve beans and muffins.\u00a0\u00a0 I have a favorite muffin recipe that I have used for years that I wanted to use.\u00a0 I went to look for it, and thought I had found it.\u00a0 So I made it last night.\u00a0 I thought it was a sweet muffin recipe\u2014but I grabbed the wrong recipe and it made a savory muffin that I would serve with chili.\u00a0 It is a great recipe\u2014just not the sweet one I had intended to make.\u00a0 So, I am including both recipes.\u00a0 They are both great\u2014but in different ways.\u00a0 I have switched out pureed beans in many recipes for the fat, and it makes the muffins a little bit denser, but tasty!<\/p>\n<p align=\"center\"><a href=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/02\/February-2013-145.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"February 2013 145\" alt=\"\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/02\/February-2013-145-300x225.jpg\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>Sweet Pinto Bean Muffins<\/p>\n<\/div>\n<div>\n<ul>\n<li>2 eggs<\/li>\n<li>1 cup mashed pinto beans<\/li>\n<li>1 cup milk<\/li>\n<li>2 cups flour<\/li>\n<li>1\/4 cup vegetable oil<\/li>\n<li>2 teaspoons brown sugar<\/li>\n<li>1 teaspoon salt<\/li>\n<li>2 teaspoons baking powder<\/li>\n<\/ul>\n<\/div>\n<p>Mix dry ingredients.\u00a0 Beat eggs then mix with milk, oil and mashed beans.\u00a0 Combine all ingredients mixing enough to just moisten dry ingredients.\u00a0 Fill muffin tins 1\/2 full and bake at 400 for 25 minutes.\u00a0 Serve hot.\u00a0 These freeze well.\u00a0 I add a teaspoon of cinnamon and a teaspoon of vanilla to these, and they are great!<\/p>\n<p style=\"text-align: center;\">\u00a0<a href=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/02\/February-2013-148.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"February 2013 148\" alt=\"\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2013\/02\/February-2013-148-300x225.jpg\" width=\"300\" height=\"225\" \/><\/a><\/p>\n<p>Savory Bean Muffins<\/p>\n<p>Recipe from the Nebraska Dry Bean Commission<\/p>\n<ul>\n<li>1 cup red beans or pinto beans cooked<\/li>\n<li>1 cup whole wheat flour<\/li>\n<li>1 cup yellow corm meal, whole grain<\/li>\n<li>4 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>3 tablespoons sugar<\/li>\n<li>2 each eggs, beaten<\/li>\n<li>3\/4 cup non-fat plain yogurt<\/li>\n<li>3 tablespoons margarine, melted<\/li>\n<\/ul>\n<p>In a large bowl, combine flour, corn meal, baking powder, salt and sugar.\u00a0 In a blender, combine eggs, yogurt, margarine and beans until smooth.\u00a0 Add this mixture to the dry ingredients, stirring just until dry ingredients are moistened.\u00a0 Spoon batter into 12-15 greased or paper-lined muffin cups.\u00a0 Bake the muffins at 425 degrees for 20-25 minutes or
