{"id":4757,"date":"2013-01-30T20:58:40","date_gmt":"2013-01-31T02:58:40","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=4757"},"modified":"2013-08-06T20:32:54","modified_gmt":"2013-08-06T20:32:54","slug":"snow-days","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/nutrition-2\/snow-days\/","title":{"rendered":"Snow Days!"},"content":{"rendered":"<div>\n<p>It snowed today\u2014enough to cancel school.\u00a0 That means Mom gets to work from home!\u00a0 So what does one do with three kids on a snowy day?\u00a0 My answer is to cook.\u00a0 What a great time to cut up vegetables to roast, make homemade dinner rolls and a big pot of Baja Pork Stew.\u00a0 This is a recipe that makes three meals worth.\u00a0 It is worth the time it takes to make.\u00a0 It can be made a little healthier with low-sodium broth and low-fat sour cream.\u00a0 The green onions and fresh cilantro really add another level of flavor!\u00a0 It freezes well too!\u00a0 Give this a try tonight!\u00a0 I made it in my favorite Le Crueset pan.\u00a0 It made me smile all afternoon!\u00a0 Thank you to my friends for sharing such a great recipe.<\/p>\n<p><span style=\"font-size: 15px;\">Baja Pork Stew<\/span><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" style=\"font-family: inherit; font-style: inherit;\" alt=\"\" src=\"http:\/\/t2.gstatic.com\/images?q=tbn:ANd9GcQQPDst5uBpU0LzHhvFBW_z1z4TPbhdrcpDJdZoNa-3_7vmqFmSjA\" width=\"158\" height=\"158\" name=\"eHpa1_ZumTpM-M:\" data-sz=\"f\" data-src=\"http:\/\/t2.gstatic.com\/images?q=tbn:ANd9GcQQPDst5uBpU0LzHhvFBW_z1z4TPbhdrcpDJdZoNa-3_7vmqFmSjA\" \/><\/p>\n<p>Southern Living NOVEMBER 1998<\/p>\n<p>Yield: Makes 8 servings<\/p>\n<p>Ingredients<\/p>\n<\/div>\n<ul>\n<li>1 (3-pound) boneless pork loin roast, cut into 3\/4-inch cubes<\/li>\n<li>1\/2 cup all-purpose flour<\/li>\n<li>3 tablespoons vegetable oil<\/li>\n<li>3 (10 1\/2-ounce) cans chicken broth, undiluted<\/li>\n<li>2 (10-ounce) cans tomatoes and green chiles, undrained<\/li>\n<li>1 (4-ounce) can diced green chiles, undrained<\/li>\n<li>2 medium onions, chopped<\/li>\n<li>4 garlic cloves, minced<\/li>\n<li>1 tablespoon ground cumin<\/li>\n<li>1 tablespoon dried oregano<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>2 (15 1\/2-ounce) cans black beans, drained and rinsed<\/li>\n<li>1 (16-ounce) package frozen whole kernel corn<\/li>\n<li>8 (8-inch) flour tortillas<\/li>\n<li>Shredded Cheddar cheese<\/li>\n<li>Toppings: sour cream, chopped green onions, salsa<\/li>\n<li>Garnish: fresh cilantro sprigs<\/li>\n<\/ul>\n<p>Preparation<\/p>\n<p>Dredge pork in flour.\u00a0 Brown half the pork in 1 1\/2 tablespoons hot oil in a large Dutch oven, turning once. Repeat procedure with remaining pork and oil. Stir in broth and next 7 ingredients; bring to a boil. Reduce heat, and simmer 1 hour and 30 minutes.<\/p>\n<p>Stir in beans and corn; simmer 30 minutes. Spoon mixture down center of flour tortillas. Sprinkle with cheese, and fold sides over filling.
