I am truly not a trendy person; I don&#8217;t dress, listen, or cook trendy. Now don&#8217;t get me wrong, I find it fun to see what new products and concepts that are on the horizon. So for this blog that is supposed to take a trend and put it in a pot is not my cup of tea. What is my thing is the soup aspect of the blog. I love soup, I would eat it every day if the family would be game for that.<\/p>\n<p>Sometimes I heat up soup from a can, but 98% of the time it is homemade. This recipe is more like the kind my grandmother would make in her kitchen, throwing things into a pot and letting it simmer as you go about the rest of your days chores. I love recipes and spend a lot of time following them row by row. But it is good to step out your comfort zone and wing it. So here is my Lazy Day Leftover Soup.<\/p>\n<p>Lazy Day Leftover Soup<\/p>\n<ul>\n<li>2 cans (8 oz) tomato sauce low salt (can substitute tomato juice)<\/li>\n<li>2 cups chicken stock (leftover from another meal)<\/li>\n<li>16 oz frozen mixed vegetables<\/li>\n<li>1 1\/2 cups cut up roast beef (leftover from another meal)<\/li>\n<li>2 bay leaves<\/li>\n<li>1\/2 tablespoon parsley<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p>Place all ingredients in enamel-covered cast iron pot, cover and place in 250 degree F oven for 4 hours.
