Healthy Eating a Reality: Ode to the Slow Cooker

The Slow Cooker is a fabulous invention! When I do my meal planning for the week and there’s a day that’s super busy, my slow cooker is the solution. Having a hot, homemade, healthy, and delicious meal waiting for me at the end of a long day is glorious. On my drive home from work, I’m still absorbed in the events of the day. But then I open the door into our house and the tantalizing smells of dinner immediately catch my attention and dissolve the worries of the day.

A main reason I’m a big fan of my slow cooker is because I don’t worry about timing. I’m at work the whole day and can leave work, run a bunch of errands, and come home to a warm meal waiting for me. It doesn’t matter if I get caught up along the way, my hot meal will be delicious anytime I get home.

The timing factor is also very helpful for my husband. His work is so unpredictable that your guess is as good as mine as to when he’ll be home. It feels good to have a hot meal waiting for him. Trying to safely keep some conventional entrees (i.e. roasted chicken breast) warm for unknown amounts of time have resulted in the use of great quantities of condiments to try to hide the dried out flavor. On the contrary, the slow cooker meals produce smiles of satisfaction.

Two of my favorite meals are Slow Cooker Vegetable Chili and Cowboy Casserole. I use soy crumbles instead of ground beef so I call my version Cowgirl Casserole. It’s a tasty way to add soy to your diet and you don’t have to brown soy crumbles which saves you a step. Both these recipes taste great, but just as great are the directions that state: Add all ingredients to slow cooker. Cover and cook. Could it get any easier?

<span style="font-size:
