Side Dishes"},"content":{"rendered":"<p>I come from a long line of terrific cooks.\u00a0 My Mom can make an extraordinary meal out of nothing.\u00a0 My Mother-in-law was a great cook too!\u00a0 We have many recipes passed down through the generations, many of which are high in calories and fat.\u00a0 Considering people used the ingredients they had in the \u201cold days,\u201d many of the ingredients were eggs, cream and lard.\u00a0 Times have changed.\u00a0 I still use many of my relative\u2019s recipes\u2014but only once or twice a year.\u00a0 For example, my Mother-in-law\u2019s green bean casserole, made with a three-pound brick of Velveeta only comes out at Thanksgiving and Christmas.\u00a0 My Grandma\u2019s sour cream cut-out cookie recipe is used at Christmas.\u00a0 These are added to a healthy diet, and consumed in moderation.<\/p>\n<p>Side dishes can consume a large amount of calories during a holiday meal.\u00a0 I try to eat things I may not have the rest of the year.\u00a0 Like turkey, stuffing and real mashed potatoes.\u00a0 I forgo the dinner rolls and other things I can have anytime.\u00a0 I also save my calories for dessert.\u00a0 Dessert doesn\u2019t have to break the bank.\u00a0 I consider dessert a side dish!\u00a0 I want to share one of my favorites!<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2011\/10\/pumpkin.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-6567\" alt=\"pumpkin\" https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2011\/10\/pumpkin.jpg 336w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Fall = pumpkin in our house.\u00a0 Any dish with pumpkin is a hit.\u00a0 My friend put pumpkin in her spaghetti sauce the other night to thicken it up\u2014and I understand it was incredible!\u00a0 I learned this recipe in a Weight Watchers class and have shared it with MANY people.\u00a0 It is simple, and has morphed, based on the person making it.<\/p>\n<p>Pumpkin Cake<\/p>\n<ul>\n<li>1 box spice cake mix<\/li>\n<li>1 can of pumpkin<\/li>\n<li>1 cup water<\/li>\n<\/ul>\n<p>Mix all ingredients in a bowl.\u00a0 Place in a 9 x 13-inch pan and bake in a pre-heated oven for 20-30 minutes, or until a knife comes out clean.\u00a0 Cool.\u00a0 Serve plain or with Cool Whip.\u00a0 If you do not have a spice cake mix, use a white or yellow mix and add a teaspoon of pumpkin pie spice.<\/p>\n<p>This is a wonderful dessert, and is a great source of vitamin A.\u00a0 It can replace a pumpkin pie or cheesecake at Thanksgiving.\u00a0 Some of my co-workers have added chocolate chips to it, caramel sauce, or made muffins out of them.\u00a0 Any way you serve it\u2014it is great.\u00a0 Warm with vanilla ice cream sounds great too!\u00a0 After dinner, a nice walk around the block will make everyone feel
