{"id":4447,"date":"2012-10-05T11:33:40","date_gmt":"2012-10-05T17:33:40","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=4447"},"modified":"2013-08-06T21:28:01","modified_gmt":"2013-08-06T21:28:01","slug":"check-out-that-huge-head-of-lettuce","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/e\/check-out-that-huge-head-of-lettuce\/","title":{"rendered":"Check out that huge head of cabbage!"},"content":{"rendered":"<p>This week with all the goodies we received from Wenninghoff\u2019s CSA I was able to make salsa, bruschetta, Carrot-Cumin Slaw, butternut squash, green beans, stir fry with broccoli, onions, and red pepper.\u00a0 Below are recipes for the Carrot-Cumin Slaw, thank you Martha Stewart and a very simple recipe for Butternut Squash.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Check out that huge head of cabbage!<\/p>\n<p>&nbsp;<\/p>\n<p>Carrot-Cumin Slaw<\/p>\n<p>Ingredients<\/p>\n<p>3 c.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 green cabbage, cored and shredded<br \/>\n1 \u00be c.\u00a0\u00a0\u00a0\u00a0 carrots, coarsely grated<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 jalapeno, seeded and minced<br \/>\n\u00bc c.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 canola oil<br \/>\n2 T.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 freshly squeezed lime juice<br \/>\n3 T. \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 cilantro, chopped<br \/>\n\u00bd t.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 cumin, ground<br \/>\nsalt and black pepper to taste<\/p>\n<p>Instructions<\/p>\n<p>In a large bowl, combine cabbage, carrots, and jalapeno.\u00a0 Drizzle with oil and lime juice.\u00a0 Add cilantro and cumin.\u00a0 Season with salt and pepper.\u00a0 Toss to combine.\u00a0 Serve immediately, or refrigerate in an airtight container for up to 4 hours to allow flavors to develop.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"squash\" alt=\"squash\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2012\/10\/cabbagebutternutsquash.jpg\" width=\"230\" height=\"299\" \/><span style=\"font-size: medium;\"><strong><br \/>\n<\/strong><\/span><\/p>\n<p>Butternut Squash<\/p>\n<p>Instructions<\/p>\n<ol>\n<li>Clean under running water.<\/li>\n<li>Cut in half lengthwise.<\/li>\n<li>Remove Seeds.<\/li>\n<li>Place in baking dish, cut side down with 1\/2 cup water.<\/li>\n<li>Bake 45 minutes at 350F.\u00a0 Done when tender.<\/li>\n<li>Season with\u00a0salt, butter, and Parmesan cheese, or brown sugar and cinnamon.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This week with all the goodies we received from Wenninghoff\u2019s CSA I was able to make salsa, bruschetta, Carrot-Cumin Slaw, butternut squash, green beans, stir fry with broccoli, onions, and red pepper.\u00a0 Below are recipes for the Carrot-Cumin Slaw, thank you Martha Stewart and a very simple recipe for Butternut Squash. &nbsp;
