{"id":4273,"date":"2012-08-22T10:01:36","date_gmt":"2012-08-22T16:01:36","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=4273"},"modified":"2013-08-07T15:44:20","modified_gmt":"2013-08-07T15:44:20","slug":"magical-zucchini","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/e\/magical-zucchini\/","title":{"rendered":"Magical Zucchini!"},"content":{"rendered":"<div><\/div>\n<div><\/div>\n<div><\/div>\n<div>I had always heard jokes about people slipping excess zucchini in unlocked cars and on front porches.\u00a0 Even in mailboxes.\u00a0 I never believed it until last night.\u00a0 My son came home from child care with a MONSTER zucchini.\u00a0 It was huge.\u00a0 He told me that someone had placed it in his cubby.\u00a0 He wasn\u2019t sure where it came from.\u00a0 I thought maybe it came from the school garden, but really didn\u2019t think it was all that strange.\u00a0 Then today I spoke with someone at child care, and found out that my youngest may have picked it up himself to bring home (someone was giving it away\u2014no, he didn\u2019t steal it!). Select DOUGH setting. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1\/2 to 1 TBSP at a time. If it is too wet and sticky, add 1 TBSP of flour at a time. See our <a href=\"http:\/\/www.redstaryeast.com\/tips-troubleshooting\/bread-machine-tips\" target=\"_blank\">Bread Machine<\/a> section for more helpful tips and information. When cycle is complete, remove dough from pan. Continue with Shaping, Rising and Baking directions below.<\/p>\n<p>(Or select BASIC cycle for untwisted version.)<\/p>\n<p>Traditional Method<\/p>\n<p>Combine yeast, 1 cup flour, oatmeal, lemon pepper, salt, sugar and cheese. Heat oil and buttermilk to 120\u00b0-130\u00b0F. Add to flour mixture. Beat 3 minutes on medium speed. Add pepper, onion, and zucchini. By hand, stir in enough remaining flour to make firm dough. Knead on floured surface 5 to 7 minutes until smooth and elastic. Place in lightly greased bowl; turn to grease top. Cover; let rise until dough tests <a href=\"http:\/\/www.redstaryeast.com\/lessons-yeast-baking\/baking-steps-guide\/rising-ripe-test-first-rise\" target=\"_blank\">ripe<\/a>.<\/p>\n<p>Shaping Rising and Baking<\/p>\n<p>Turn dough onto lightly floured surface; punch down to remove air bubbles. Divide dough in half; let relax 5 minutes. Roll each part into an 8- inch rope. Overlap two ends; twist ropes together. Pinch ends to seal; tuck under. Place in greased 8 x 4- inch loaf pan. Cover; let rise until indentation remains after lightly touching. Gently brush risen loaf with 1 tsp milk. Bake in preheated 375\u00b0F oven for 30 to 40 minutes. Remove from pan; cool on rack.<\/p>\n<p>You can substitute Instant (fast-rising) yeast for Active Dry Yeast. Traditional methods- replace 1:1. Expect your dough to rise faster; always let your dough rise until \u2018ripe\u2019. Bread Machines- use 1\/2 tsp Instant yeast (or 3\/4 tsp Active Dry yeast) per cup of flour in your recipe. Grease and flour bottom only of 9&#215;5-inch loaf pan. In large bowl with electric mixer, beat brown sugar and butter on medium speed until light and fluffy. With spoon, stir in zucchini, pineapple and eggs. Stir in flour, baking soda, 1 teaspoon cinnamon, the salt and allspice until well blended. Fold in walnuts. Spread evenly in pan.<\/li>\n<li>Bake 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool 30 minutes.<\/li>\n<li>In small bowl, mix all glaze ingredients until smooth; spoon over warm loaf. Cool completely, about 1 hour.
