{"id":4219,"date":"2012-08-10T09:34:12","date_gmt":"2012-08-10T15:34:12","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=4219"},"modified":"2013-08-07T16:49:52","modified_gmt":"2013-08-07T16:49:52","slug":"from-locally-grown-produce-to-sweet-potato-ice-cream","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/e\/from-locally-grown-produce-to-sweet-potato-ice-cream\/","title":{"rendered":"From Locally Grown Produce to Sweet Potato Ice Cream!"},"content":{"rendered":"<p style=\"text-align: left;\"><span style=\"font-size: small;\"><span style=\"font-family: Calibri;\"><span style=\"font-family: book antiqua,palatino;\"><br \/>\n<\/span><\/span><\/span><\/p>\n<p style=\"text-align: left;\">Today I had the pleasure of picking up our CSA bag from Wenninghoff\u2019s.\u00a0 While I was there, I had fun taking pictures of the beautiful produce and even got to take a tour of the hen house with Amy Wenninghoff .\u00a0 There were chickens laying eggs, a cute baby chick and an interesting rooster perusing around the house.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>This week we were given sweet corn, yellow squash (see recipe below), white onions, peach salsa, and a huge cantaloupe.\u00a0 It was honestly the best cantaloupe I\u2019ve even eaten and both of my kids ate it, even the picky one!<\/p>\n<p><a style=\"font-family: Arial, Helvetica, sans-serif; font-size: 15px; font-style: normal; text-align: center;\" href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2012\/08\/yellow-squash.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-7875\" alt=\"yellow squash\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2012\/08\/yellow-squash.jpg\" width=\"233\" height=\"175\" \/><\/a><\/p>\n<p><span style=\"font-size: 15px;\">Summer Squash Casserole<\/span><\/p>\n<table border=\"1\" cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td valign=\"top\" width=\"319\">4 cups sliced yellow squash<\/td>\n<td valign=\"top\" width=\"319\">2 Tablespoons butter<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\" width=\"319\">\u00bd cup chopped onion<\/td>\n<td valign=\"top\" width=\"319\">1 teaspoon black pepper<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\" width=\"319\">35 buttery round crackers, crushed<\/td>\n<td valign=\"top\" width=\"319\">1 teaspoon salt<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\" width=\"319\">1 cup shredded cheddar cheese<\/td>\n<td valign=\"top\" width=\"319\">\u00bc cup butter, melted<\/td>\n<\/tr>\n<tr>\n<td valign=\"top\" width=\"319\">2 eggs, beaten<\/td>\n<td valign=\"top\" width=\"319\">\u00be cup milk<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ol>\n<li>Preheat oven to 400\u00b0F.<\/li>\n<li>Place squash and onion in a large skillet over medium heat.\u00a0 Pour in small amount of water. Cover, and cook until squash is tender, about 5 minutes.
