recipes using fresh green beans, broccoli, and zucchini!"},"content":{"rendered":"<p>This week in our Community Supported Agriculture (CSA) bag from Wenninghoff\u2019s we received Nebraska grown broccoli, green beans, zucchini and tomatoes.\u00a0 I decided to try my hand at making zucchini bread, in the form of muffins so that my children would be more likely to try it.\u00a0 They really &#8220;Chocolate Chip Zucchini Bread,&#8221; recipe that I made.\u00a0<\/a> I also made a low calorie version broccoli salad and roasted green beans with mushrooms and Parmesan.\u00a0 The zucchini muffins were a bit time consuming but the other two dishes were quick and easy.\u00a0 Our blog will be updated weekly.\u00a0 We will be sharing the recipes we make using CSA fresh produce.<\/p>\n<p><a Salad<\/p>\n<p>Ingredients<\/p>\n<p>4 cups fresh broccoli florets<br \/>\n\u00bc cup red onion, diced<br \/>\n3 tablespoons craisins<br \/>\n2 tablespoons dry roasted sunflower seeds<br \/>\n\u00bc cup plain yogurt<br \/>\n2 tablespoons orange juice<br \/>\n1 tablespoons fat-free mayonnaise<\/p>\n<p>Directions<\/p>\n<ol>\n<li>Combine the broccoli, onion, and sunflower seeds.<\/li>\n<li>In a small bowl, whisk the yogurt, orange juice, and mayonnaise until blended.<\/li>\n<li>Pour over the broccoli mixture and toss to coat.<\/li>\n<\/ol>\n<p>Roasted Green Beans with Mushrooms and Parmesan<\/p>\n<p>Ingredients<\/p>\n<p>8 ounces mushrooms, sliced in \u00bd inch slices<br \/>\n1 pound fresh green beans<br \/>\n1 \u00bd tablespoons olive oil<br \/>\n1 tablespoon balsamic vinegar<br \/>\n2 tablespoons grated Parmesan cheese<br \/>\nsalt and pepper to taste<\/p>\n<p>Directions<\/p>\n<ol>\n<li>Preheat oven to 425\u00b0F.<\/li>\n<li>Wash mushrooms, dry and cut into \u00bd inch slices.<\/li>\n<li>Wash and trim the end of the green beans.<\/li>\n<li>Put beans and mushrooms into a plastic bag or bowl.<\/li>\n<li>Whisk together olive oil and balsamic, pour over and mix to coat the beans and mushrooms.<\/li>\n<li>Arrange on a cookie sheet and roast for 15-20 minutes.<\/li>\n<li>Cook until beans are tender-crisp.<\/li>\n<li>Remove from oven and sprinkle with Parmesan
