It finally occurred to me that a side dish my mom used to make would be the perfect starting point. The original dish, called \u2018Onion Pie\u2019 had a base of saltine crackers &#8211; why couldn&#8217;t I use LAYS\u00ae Classic Potato Chips as the base. I also took a serious look at the rest of the ingredients. That was when I decided\u00a0 I like the thought of comfort food, but not the comfort that the original recipe was high in calories, fat and sodium. It took some time but I modified my original recipe into a healthier alternative. \u00a0Hopefully you will enjoy this dish as much I do.<\/p>\n<p>Modified Recipe for Onion Pie \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 Original Recipe for Onion Pie<\/p>\n<p>&nbsp;<\/p>\n<table border=\"1\" cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td valign=\"top\" width=\"319\">2 oz (30 chips) LAYS\u00ae Classic Potato Chips<span style=\"font-size: 15px;\">2 cups sliced onions<\/span>1 tsp margarine<\/p>\n<p>1 cup milk<\/p>\n<p>4 egg whites<\/p>\n<p>\u00bd cup sharp cheddar cheese, shredded<\/p>\n<p>Pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p>100-107 calories<\/p>\n<p>4-5 g fat<\/p>\n<p>2 g saturated fat<\/p>\n<p>8 mg cholesterol<\/p>\n<p>94-110 mg sodium<\/p>\n<p>8-9 g carbohydrates<\/p>\n<p>1 g fiber<\/p>\n<p>5 g protein<\/td>\n<td valign=\"top\" width=\"319\">1 cup crushed saltine crackers +\u00a0\u00bc cup butter2 cups sliced onions1 Tbsp butter<\/p>\n<p>1 cup milk<\/p>\n<p>2 eggs, beaten<\/p>\n<p>1 cup cheese, shredded<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p>175 calories<\/p>\n<p>12 g fat<\/p>\n<p>7 g saturated fat<\/p>\n<p>90 mg cholesterol<\/p>\n<p>199 mg sodium<\/p>\n<p>8 g carbohydrates<\/p>\n<p>0 g fiber<\/p>\n<p>7 g protein<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>Instructions for Modified Recipe:<\/p>\n<p>Preheat oven to 350\u00b0F. Place chips in 9-inch pie plate; slightly crush. Take sliced onions and saut\u00e9 in margarine until wilted. Place onions on top of chips. Mix together milk, egg whites and pepper. Pour over onions. Sprinkle shredded cheese over other ingredients. Bake for 30-35 minutes in 350\u00b0F oven.
