Cheesey carbs are even better!\u00a0 As an RD, I believe in moderation&#8211;and that all foods can fit.\u00a0 As a human&#8211;I would eat cheesy carbs everyday given the chance.\u00a0 But I know that might not be the best.\u00a0 I was so happy to find Caot Reduced Fat Cheeses!\u00a0 They are my new &#8220;new to you!&#8221; foods.\u00a0 The 50% Reduced Fat Sharp Cheddar is my favorite.\u00a0 I can eat it knowing that it is a smart choice for my bones and my heart!<\/p>\n<p style=\"text-align: center;\"><span style=\"font-family: arial,helvetica,sans-serif; font-size: medium;\">\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/span><a href=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2012\/03\/March-2012-22-318.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"March 2012 22 318\" alt=\"Vegetables after roasting\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2012\/03\/March-2012-22-318-1024x768.jpg\" width=\"430\" height=\"323\" \/><\/a><\/p>\n<p>The carb I chose for my recipe is Farro.\u00a0 I tasted it for the first time at the \u201cHealthy Kitchens, Healthy Lives\u201d Conference at the Culinary Institute in Napa two years ago.\u00a0 The conference was incredible, and the food was better!\u00a0 Dr. Joyce Goldstein was one of the presenters.\u00a0 She provided a recipe for Farro Salad with Garden Vegetables.\u00a0 I thought I had died and gone to Heaven.\u00a0 It was nutty, and had tons of fresh vegetables, and many layers of flavor.\u00a0 I have made this recipe MANY times at home and for classes at work.\u00a0 I have tweaked the recipe to make it my own.\u00a0 The original recipe from Dr. Goldstein is listed first; my updated version is listed below it.\u00a0 There are many versions of this recipe on the internet, but I find the more vegetables I add, the better it tastes.\u00a0 I find roasting them gives them a different flavor.\u00a0 Placing them on the grill is also great!\u00a0 I add flavorful, low-fat cheese to it to make it a meal item.\u00a0 Cabot Reduced Fat Cheese allows me to still enjoy flavorful cheese without the guilt of all the fat!\u00a0 I bring this dish to work for my lunch, and have fresh fruit with it.\u00a0 This dish is filling, tasty and nutritious.\u00a0 It\u2019s also a great way to use whatever fresh vegetables up you have around!\u00a0 I also love that it\u2019s a great source of whole grains!\u00a0 If I cannot find Farro in my pantry, I substitute bulgar.\u00a0 It tastes just as delicious!<\/p>\n<p style=\"text-align: center;\"><span style=\"font-family: arial,helvetica,sans-serif; font-size: medium;\">\u00a0<\/span><\/p>\n<p>Farro Salad with Fresh Vegetables<\/p>\n<\/div>\n<ul>\n<li><span style=\"font-size: 14.666666984558105px;\">3 cups water<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">Salt, to taste<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1 cup farro<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1\/2 cup olive oil, or more to taste<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1\/4 cup red wine vinegar, or more to taste<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">Salt and pepper, to taste<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1\/2 cup chopped red onion<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1\/2 cup chopped celery or fennel<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1\/2 cup chopped carrot<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1 cup peeled, seeded, and chopped cucumber<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">4 small tomatoes, seeded and chopped (optional)<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">Large handful of arugula leaves, tough stems removed and coarsely chopped (optional)<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">2 cloves garlic, finely chopped (optional)<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1 small fresh red chili pepper, finely chopped (optional)<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">2 tablespoons capers, rinsed and drained<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1\/4 cup chopped fresh flat-leaf parsley<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">1\/4 cup chopped fresh basil or mint<\/span><\/li>\n<li><span style=\"font-size: 14.666666984558105px;\">Oil-cured black olives for garnish (optional)<\/span><\/li>\n<\/ul>\n<div>\n<p>\u00a0\u00a0 \u00a0 \u00a0 \u00a0 In a saucepan, bring the water to a boil and salt it lightly. Add the farro, reduce the heat to low, cover, and simmer for 20 to 25 minutes or until the grains are soft but still have some firmness at the center. If the farro is ready but has not absorbed all the water, drain the cooked farro in a sieve. (Each brand absorbs water differently.) Place the drained farro in a bowl and let it cool.<\/p>\n<\/div>\n<div>\n<p>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add the olive oil, vinegar, salt, and pepper to the farro; toss to coat. Fold in the\u00a0\u00a0\u00a0\u00a0 onion, celery or fennel, carrot, and cucumber. Then add the tomatoes, arugula, garlic, and chili, if using.\u00a0\u00a0 Add the capers, parsley, and basil or mint, and taste and taste for seasoning. Add more oil, vinegar, salt, or pepper, if you like.\u00a0 Garnish the salad with olives, if using. Serve at room temperature.<\/p>\n<p>&nbsp;<\/p>\n<p>Cindy\u2019s Version of Farro Salad with Fresh Vegetables<\/p>\n<\/div>\n<div>\n<ul>\n<li>3 cups water<\/li>\n<li>Salt, to taste<\/li>\n<li>1 cup farro<\/li>\n<li>1\/2 cup olive oil, or more to taste<\/li>\n<li>1\/4 cup red wine vinegar, or more to taste<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>3\/4 cup chopped red onion<\/li>\n<li>1\/2 cup chopped celery<\/li>\n<li>1\/2 cup chopped carrot<\/li>\n<li>1 cup peeled, seeded, and chopped cucumber<\/li>\n<li>4 small tomatoes, seeded and chopped<\/li>\n<li>4 cloves garlic, finely chopped<\/li>\n<li>1 small fresh red chili pepper, finely chopped<\/li>\n<li>1\/4 cup chopped fresh flat-leaf parsley<\/li>\n<li>1\/4 cup chopped fresh basil<\/li>\n<li>\u00bd cup portabella mushrooms, chopped<\/li>\n<li>1 whole red pepper, chopped<\/li>\n<li>\u00bd cup zucchini peeled and chopped<\/li>\n<li>\u00bd cup egg plant diced<\/li>\n<li>1 large teaspoon chopped thyme<\/li>\n<li>1 cup shredded Cabot 50% Reduced Fat Cheddar Cheese<\/li>\n<li>1\/4 cup each chopped green olives<\/li>\n<li>Oil-cured black olives for garnish<\/li>\n<\/ul>\n<\/div>\n<p>In a saucepan, bring the water to a boil and salt it lightly. Place the drained farro in a bowl and let it cool.<\/p>\n<p>Place onion, celery, carrots, garlic, chili pepper, mushrooms, red pepper and eggplant to be roasted on a sheet pan and drizzle with olive oil (amount depends upon amount of vegetables used).\u00a0\u00a0 Roast at 400 degrees until done&#8211;about 30-40 minutes.\u00a0 Cool.\u00a0 Any vegetables can be substitutes and roasted\u2014asparagus, green peppers, corn!)<\/p>\n<p>Add the olive oil, vinegar, salt, and pepper to the farro; toss to coat. Fold in all vegetables roasted and unroasted).\u00a0 Add parsley and basil and taste for seasoning. Add more oil, vinegar, salt, or pepper, if you like.\u00a0 Garnish the salad with olives, if using.
