{"id":3660,"date":"2012-01-21T06:00:52","date_gmt":"2012-01-21T12:00:52","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=3660"},"modified":"2013-08-07T21:12:45","modified_gmt":"2013-08-07T21:12:45","slug":"not-your-mamas-pancakes","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/e\/not-your-mamas-pancakes\/","title":{"rendered":"Not Your Mama&#8217;s Pancakes!"},"content":{"rendered":"<p>Pancakes are a true comfort food.\u00a0 They can be served at all meals, and can be plain and simple.\u00a0 They can also be jazzed up, with additional flavorings and ingredients.\u00a0 What kid doesn&#8217;t like chocolate chip pancakes?!\u00a0 They can also be a quick, healthy addition to your daily breakfasts.\u00a0 I recently did a class before Christmas on edible gifts.\u00a0 It included a great recipe to make a pancake mix, to give as a gift and use later.\u00a0 It has oatmeal in it with other healthy ingredients. \u00a0I made it following the recipe, but I had blood orange flavored olive oil.\u00a0 It made the pancakes HEAVENLY!!!!!!!!!\u00a0 I highly recommend this!\u00a0 Thanks to my good friend for the Christmas gift of the flavored olive oil.\u00a0 Give this recipe a try&#8211;even my kids like them!<\/p>\n<p>Good Mornin&#8217; Pancake Mix<\/p>\n<p>Recipe by SHARON SUTTON, LINDSEY, OHIO and Taste of Home \u00a0 \u00a0 \u00a0 20 Servings<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>2 cups all-purpose flour<\/li>\n<li>1-1\/4 cups whole wheat flour<\/li>\n<li>1 cup buttermilk blend powder<\/li>\n<li>1 cup old-fashioned oats<\/li>\n<li>1\/3 cup sugar<\/li>\n<li>3 tablespoons baking powder<\/li>\n<li>3 teaspoons baking soda<\/li>\n<li>1 teaspoon dried orange peel<\/li>\n<li>1\/2 teaspoon ground cinnamon<\/li>\n<li>1 cup golden raisins<\/li>\n<li>1 cup sliced almonds, toasted<\/li>\n<\/ul>\n<p>ADDITIONAL INGREDIENTS (for each batch):<\/p>\n<ul>\n<li>1 egg<\/li>\n<li>3\/4 cup water<\/li>\n<li>2 tablespoons canola oil<\/li>\n<\/ul>\n<p>Directions<\/p>\n<p>Place the first nine ingredients in a food processor; cover and process until oats are ground. Place 1 cup in each of four resealable plastic bags. In each of four separate resealable plastic bags, place 1\/4 cup raisins and 1\/4 cup almonds. Store for up to 6 months. Yield: 4 batches (6 cups mix). \u00a0\u00a0To prepare pancakes: In a large bowl, combine the contents of one pancake mix bag and one fruit-nut bag. In a small bowl, whisk the egg, water and oil. Stir into dry ingredients just until moistened. \u00a0Pour batter by 1\/4 cupfuls onto a hot griddle coated with cooking spray.
