{"id":3547,"date":"2011-11-03T11:19:03","date_gmt":"2011-11-03T17:19:03","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=3547"},"modified":"2013-08-23T15:52:19","modified_gmt":"2013-08-23T15:52:19","slug":"yeast-my-rise-to-better-bread","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/c\/yeast-my-rise-to-better-bread\/","title":{"rendered":"Yeast\u2014My Rise to Better Bread!"},"content":{"rendered":"<p>I used to envy my friend Jean.\u00a0 She can bake bread\u2014and always wonderful breads!\u00a0 She can stick her finger under the water and tell if it\u2019s hot enough to proof the yeast.\u00a0 She baked most of the rolls and crescent\u2019s for my wedding!\u00a0 They were heavenly.\u00a0 I used a thermometer to measure the temperature of the water\u2014then slowly measured everything else our perfectly.\u00a0 I have never baked so many brick like breads in my life!!!\u00a0 Then, things changed.<\/p>\n<p>I took an artesian bread class at the Metropolitan Culinary Institute.\u00a0 I figured, if you really want to learn, go to the best.\u00a0 Besides\u2014Jean is very patient\u2014and doesn\u2019t deserve to be tortured by me.\u00a0 It was the best experience.\u00a0 I learned the science behind bread\u2014how it rose and why.\u00a0 Why things didn\u2019t turn out and how to use correct measurements to make whatever type of bread you wanted to.\u00a0 I learned how to not be afraid of yeast!\u00a0 I baked for 11 weeks in class.\u00a0 I made 9 grain breads, and all sorts of ethnic breads.\u00a0 I baked rolls and crescent\u2019s to die for.\u00a0 They didn\u2019t all turn out perfectly\u2014but butter always helped!\u00a0 I had a new freedom to bake with wild abandon\u2014yeast was no longer my nemesis!<\/p>\n<p>Why did I want to learn to bake bread you ask?\u00a0 My Mom is a terrific baker.\u00a0 I do not remember anything of hers being brick-like.\u00a0 The smell of bread baking, and a fresh hot slice out of the oven was the best!\u00a0 I want to give this memory to my kids\u2014and my husband is ecstatic\u2014he loves bread as much as I do!\u00a0 So\u2014be not afraid\u2014yeast is not evil!\u00a0 Try this recipe of my Mom\u2019s (it\u2019s really from Fleishmann\u2019s, but my Mom gave it to me!).\u00a0 It makes cinnamon rolls, or you can delete the cinnamon roll cinnamon part and make 12 dinner rolls out of it.\u00a0\u00a0 These rolls are my families favorites and are always served at holiday meals.\u00a0 I serve them whenever I get a chance to.\u00a0 Yummy!!!!\u00a0 Come join the fun at the <a href=\"http:\/\/www.mybakingaddiction.com\/holiday-recipe-exchange-rules\/\" target=\"_blank\">My Baking Addiction<\/a> and <a href=\"http:\/\/www.goodlifeeats.com\/holiday-recipe-exchange-rules\">GoodLife Eats<\/a> Holiday Recipe Swap sponsored by <a href=\"http:\/\/www.redstaryeast.com\/\" target=\"_blank\">Red Star Yeast<\/a>.<\/p>\n<p>Check out the following link to BreadWorld.com for the recipe.\u00a0<a href=\"http:\/\/www.breadworld.com\/Recipe.aspx?id=194\">http:\/\/www.breadworld.com\/Recipe.aspx?id=194<\/a><\/p>\n<p>&nbsp;<\/p>\n<p style=\"font-family: Arial,Helvetica,sans-serif;
