{"id":3438,"date":"2011-09-23T11:23:58","date_gmt":"2011-09-23T17:23:58","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=3438"},"modified":"2013-08-08T13:58:23","modified_gmt":"2013-08-08T13:58:23","slug":"enjoying-garden-fresh-veggies-into-the-fall","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/c\/enjoying-garden-fresh-veggies-into-the-fall\/","title":{"rendered":"Enjoying garden fresh veggies into the fall!"},"content":{"rendered":"<p>This\u00a0year I grew tomatoes, green peppers, and strawberries.\u00a0 I am still waiting for most of my tomatoes to ripen and unfortunately the prognosis isn&#8217;t good because it is the end of September.\u00a0 According to my horticulture coworkers it was a tough year here for tomatoes.\u00a0 Because in the summer it was too hot at night for them to \u201cset\u201d and now it is too cold for them to ripen.\u00a0 On the other hand, my peppers are the best I\u2019ve ever grown.\u00a0 Then there was my first attempt at growing strawberries.\u00a0 The plant looked great but it only produced one edible strawberry, and it was the size of a blueberry.\u00a0 None the less my daughter enjoyed eating it.<\/p>\n<p style=\"text-align: left;\">My garden\u2019s harvest wasn&#8217;t as bountiful as I\u2019d like but luckily my in-laws neighbors had better luck.\u00a0 From them, we received bags of cucumbers, yellow squash, and watermelon.\u00a0 I had fun trying new recipes\u00a0(see below)\u00a0using their produce, along with my\u00a0peppers and my one and only beautiful ripe tomato.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"Garden Fresh Produce\" alt=\"freshproduce\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2011\/09\/farmfreshvegetables.jpg\" width=\"418\" height=\"266\" \/><\/p>\n<p style=\"text-align: left;\"><img loading=\"lazy\" decoding=\"async\" title=\"Garden Fresh Stir Fry\" alt=\"freshveggiestirfry\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2011\/09\/vegetablestirfry.jpg\" width=\"419\" height=\"262\" \/><\/p>\n<p>These recipes were found on my favorite recipe website:\u00a0 Allrecipes.com.<\/p>\n<p>Cucumber Salsa <img loading=\"lazy\" decoding=\"async\" class=\"alignright\" title=\"cucumber salsa\" alt=\"cucumbersalsa\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2011\/09\/cucumbersalsa.jpg\" width=\"153\" height=\"144\" \/><br \/>\n<em><strong><br \/>\n<\/strong><\/em>Ingredients<br \/>\n2 medium cucumbers, peeled, and chopped<br \/>\n2 medium tomatoes, chopped<br \/>\n\u00bd cup green pepper, chopped<br \/>\n1 jalapeno pepper, minced<br \/>\n\u00bd small onion, chopped<br \/>\n1 clove garlic, minced<br \/>\n2 tablespoons lime juice<br \/>\n2 teaspoons fresh cilantro<br \/>\n\u00bd teaspoon dried dill weed<br \/>\n\u00bd teaspoon salt<br \/>\n<strong><em><br \/>\n<\/em><\/strong>Directions:\u00a0\u00a0 In a medium bowl, stir all ingredients together.\u00a0 Cover and refrigerate for 1 hour.\u00a0 Serve with tortilla chips.<\/p>\n<p>Cucumber Lemonade<strong><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" title=\"Cucumber Lemonade\" alt=\"cucumberlemonade\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2011\/09\/cucumberlemonaide.jpg\" width=\"153\" height=\"142\" \/><br \/>\n<\/strong><strong><em><br \/>\n<\/em><\/strong>Ingredients<strong><em><br \/>\n<\/em><\/strong>1 cucumber, thinly sliced<br \/>\n1 (12 ounce) can frozen lemonade concentrate<br \/>\n1 (2 liter) bottle lemon-lime flavored carbonated beverage<br \/>\n<em><strong><br \/>\n<\/strong><\/em>Directions:\u00a0 Place the cucumber slices into a large pitcher.\u00a0 Pour the lemonade concentrate over the cucumber and let stand for 10 minutes.\u00a0 Pour in the lemon-lime soda and pour into glasses to serve.<\/p>\n<p>Grilled Yellow Squash<strong><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" title=\"Grilled Yellow Squash\" alt=\"grilledyellowsquash\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2011\/09\/grilledyellowsquash1.jpg\" width=\"152\" height=\"146\" \/><\/strong><strong><br \/>\n<em><br \/>\n<\/em><\/strong>Ingredients<\/p>\n<div>\n<ul>\n<li>4 medium yellow squash<\/li>\n<li>1\/2 cup extra virgin olive oil<\/li>\n<li>2 cloves garlic, crushed<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<\/div>\n<p>Directions<\/p>\n<div>\n<ol>\n<li>Preheat the grill for medium heat.<\/li>\n<li>Cut the squash horizontally into 1\/4 inch to 1\/2 inch thick slices so that you have nice long strips that won&#8217;t fall through the grill.<\/li>\n<li>Heat olive oil in a small pan, and add garlic cloves. Cook over medium heat until the garlic starts to sizzle and become fragrant. Brush the slices of squash with the garlic oil, and season with salt and pepper.<\/li>\n<li>Grill squash slices for 5 to 10 minutes per side, until they reach the desired tenderness.
