{"id":262,"date":"2008-07-14T08:06:22","date_gmt":"2008-07-14T14:06:22","guid":{"rendered":"http:\/\/nutritionknowhow.org\/wordpress\/?p=262"},"modified":"2013-08-26T16:17:47","modified_gmt":"2013-08-26T16:17:47","slug":"the-skinny-on-beef","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/b\/the-skinny-on-beef\/","title":{"rendered":"The Skinny on Beef"},"content":{"rendered":"<p>I\u00a0had the pleasure of attending a three day conference with 30 other nutrition professionals, sponsored by the Nebraska, Kansas and Missouri Beef Councils in Kansas City this summer.\u00a0 It was an incredible experience.\u00a0 I learned so much about beef, and would love to share my information with you.<\/p>\n<p>Beef is the original diet food.\u00a0 There are 29 cuts of lean beef that compare in fat to a skinless chicken breast.\u00a0 That means that you could prepare a different cut of beef EVERYDAY\u00a0for a month without ruining your diet or your taste buds!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2008\/07\/food.jpg\" width=\"320\" height=\"209\" align=\"left\" border=\"1\" hspace=\"4\" \/>As a dietitian, I promote foods that are good for you.\u00a0 I also believe that food should taste great, or else why would you bother wasting the calories to eat it?!\u00a0 There are many factors influencing the flavor of beef; from how it was feed on the farm to your preparation techniques.\u00a0 Mind these tips for beef preparation:<\/p>\n<ul>\n<li>Match the correct muscle of meat for the right recipe.\u00a0 Using a tough piece of meat for a tender type recipe will only result in disappointment.<\/li>\n<li>Choose the correct cooking method for the particular cut.\u00a0 Moist, slow heat is used for tougher cuts of meat.<\/li>\n<li>Avoid using tarragon and rosemary, as their flavors fight with beef&#8217;s flavor instead of enhancing it<\/li>\n<li>Avoid fruity and sweet flavors.\u00a0 They are much better suited for chicken.<\/li>\n<li>Not understanding the product name at the grocery store?\u00a0 Ask the person behind the meat counter the best way to prepare a certain cut of meat if you are unsure.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2008\/07\/cattle-picture.jpg\" width=\"320\" height=\"209\" align=\"right\" border=\"1\" hspace=\"4\" \/>One of the highlights to this conference was the afternoon the thirty of us spent at the Tailgate Ranch.\u00a0 We were able to listen to a producer panel of very intelligent individuals.\u00a0 They explained how beef\u00a0was handled from pregnancy to your table.\u00a0 They\u00a0told us\u00a0why certain breeds were chosen for the best ratio of muscle to lean tissue and tender beef.\u00a0 They\u00a0discussed at first most cattle are raised on a ranch. \u00a0Then they are moved to a feedlot and fed grain before heading to the processing plant. Feeding the grain at the end helps the cattle put on weight quicker, and\u00a0makes the\u00a0beef have a better flavor.\u00a0 Food safety and the customer&#8217;s needs were at the top of their list of importance.\u00a0 They also explained the differences between grain-fed beef, certified organic beef, natural beef, and grass-finished beef.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" alt=\"\" src=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2008\/07\/meat-cutter.jpg\" width=\"250\" height=\"175\" align=\"left\" border=\"1\" hspace=\"4\" \/>The conference also took us to\u00a0Sysco for cooking demonstrations and the chance to prepare a beef dish of our own.\u00a0 We listened to many great speakers.\u00a0 It was by far the best nutrition conference I have ever attended!\u00a0 I send great thanks to the Beef Councils and all of the terrific dietitians that I was honored to network with!\u00a0 Visit the <a title=\"Nebraska Beef Council\" href=\"http:\/\/www.nebeef.org\" target=\"_blank\">Nebraska Beef Council&#8217;s<\/a> website for lots of terrific information and recipes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I\u00a0had the pleasure of attending a three day conference with 30 other nutrition professionals, sponsored by the Nebraska, Kansas and Missouri Beef Councils in Kansas City this summer.\u00a0 It was an incredible experience.\u00a0 I learned so much about beef, and would love to share my information with you.
