or Famine with Produce"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>It is the second week in August.\u00a0 School starts next week.\u00a0 We picked our first ripe tomato last week from the garden.\u00a0 This week I have seven eggplant, four zucchini, a dozen ears of corn, six peaches, six pounds of strawberries, 6 pounds of blueberries, five green peppers, a big bowl of cherry tomatoes, and loads of ripening tomatoes that will be ready anytime.\u00a0 On top of that we have two ripe cantaloupes and one black diamond watermelon!\u00a0 Oh my!\u00a0 We have gone from little produce to having it come out of our ears!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-12381 alignleft\" a of produce, the first concern is not letting any of it go to waste.\u00a0 I spent about two hours getting everything into a more manageable shape.\u00a0 Check out what happened!<\/p>\n<p><img usually pretty simple.\u00a0 Wash, pat dry, freeze separately on a sheet pan until frozen, then store in an air tight container to use later.\u00a0 I will be using the corn soon&#8211;so I froze it in amounts for meals.\u00a0 The zucchini was frozen in amounts used in my favorite recipes.\u00a0 I always add an extra half of a cup so compensate for the water loss.\u00a0 Melons can be frozen for short periods of time and used in smoothies&#8211;or on ice cream!\u00a0 Cantaloupe and vanilla ice cream rocks!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-12379
