{"id":12357,"date":"2016-07-26T19:00:11","date_gmt":"2016-07-27T00:00:11","guid":{"rendered":"http:\/\/www.nutritionknowhow.org\/blog\/?p=12357"},"modified":"2020-12-19T12:35:57","modified_gmt":"2020-12-19T18:35:57","slug":"3-simple-garden-fresh-recipes","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/z\/3-simple-garden-fresh-recipes\/","title":{"rendered":"3 Simple Garden Fresh Recipes"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>It\u2019s easy to eat healthy right now with all the fresh produce very much in season.&nbsp; Between my small garden, the garden at work, and bags full of produce from Community Support Agriculture (CSA) I\u2019ve stayed busy creating fun new recipes and revisiting my summer favorites.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-12350 size-medium\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogleak-300x225.jpg\" alt=\"Leeks\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogleak-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogleak-768x576.jpg 768w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogleak-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><br \/>\nIn our CSA bag this week I got cabbage, leeks, potatoes, broccoli, tomatoes, cucumber and zucchini.&nbsp; I decided to wing it and make up a \u201cchop salad,\u201d recipe, the first picture in this article is the finished product.&nbsp; I chopped up 4 cups of the cabbage, 2 cups chopped broccoli, 1 cup diced cucumber, 1 medium diced tomato and \u00bc cup minced leak.&nbsp; Then I added a few ingredients I had at home: 1\/2 cup shredded carrots, 1\/2 cup dried cranberries, 1\/4 cup sunflower seeds, 1\/2 cup feta cheese, and a 1\/2 cup of pre-made salad dressing with olive oil and herbs.&nbsp; A wide variety of different salad dressings would work. I took it to a potluck that night and it was a hit.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-12352 aligncenter\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogzucchinibrownies-300x186.jpg\" alt=\"blogzucchinibrownies\" width=\"311\" height=\"193\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogzucchinibrownies-300x186.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogzucchinibrownies-768x476.jpg 768w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogzucchinibrownies-1024x635.jpg 1024w\" sizes=\"(max-width: 311px) 100vw, 311px\" \/><br \/>\nI also made brownies but to mix it up I added 1 cup of grated zucchini to the brownie mix.&nbsp; It turned out very well, it was moist and seemed to rise more.&nbsp; My kids also liked it.&nbsp; Realize adding a cup of zucchini to a brownie mix doesn\u2019t make it the most nutrient dense food, but it still adds a good amount of vitamin C, and some fiber, vitamin B6, and potassium.&nbsp; It also reduced the amount of calories per serving.&nbsp; I also took these to our potluck and no one ever suspected the zucchini and the pan was empty in no time.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-12353 aligncenter\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogbruch-300x215.jpg\" alt=\"Bruschetta\" width=\"300\" height=\"215\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogbruch-300x215.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogbruch-768x550.jpg 768w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blogbruch-1024x733.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><br \/>\nWith the remaining ingredients, I made bruschetta.&nbsp; Bruschetta is one of my favorite summer dishes. &nbsp;Check&nbsp;<a href=\"http:\/\/food.unl.edu\/fnh\/tomato-basil-bruschetta\">out this link<\/a>&nbsp;for an easy bruschetta recipe. With the remaining ingredients a nutrition team member made Vegetable Whole Grain Pasta Salad at a community program.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-12359 aligncenter\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/07\/blog-pasta-salad-veggie.jpg\" alt=\"blog pasta salad veggie\" width=\"296\" height=\"271\"><\/p>\n<div class=\"easyrecipe\" data-rating=\"0\">\n<div class=\"item ERName\">Vegetable Whole Grain Pasta Salad<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Nebraska Extension NEP Cook&#8217;s Helper<\/span><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">6 servings<\/span><\/div>\n<div class=\"ERSummary summary\">Any of these vegetables will work great: carrots, celery, broccoli, green pepper, red pepper, cucumber, onion, and many more!<\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 1\/2 cup whole grain pasta<\/li>\n<li class=\"ingredient\">1\/2 cup vinegar<\/li>\n<li class=\"ingredient\">1\/2 cup water<\/li>\n<li class=\"ingredient\">1\/4 cup sugar<\/li>\n<li class=\"ingredient\">1\/3 cup olive oil<\/li>\n<li class=\"ingredient\">1\/8 teaspoon pepper<\/li>\n<li class=\"ingredient\">1\/2 teaspoon garlic powder<\/li>\n<li class=\"ingredient\">1\/4 teaspoon dill weed<\/li>\n<li class=\"ingredient\">1\/4 teaspoon parsley or 1\/2 teaspoon fresh parsley<\/li>\n<li class=\"ingredient\">3 cups fresh vegetables, chopped<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Cook pasta according to package directions.<\/li>\n<li class=\"instruction\">In a small saucepan, combine vinegar, water, sugar, vegetable oil, salt, pepper, garlic powder, dill weed, and dried parsley.<\/li>\n<li class=\"instruction\">Bring to a boil then remove from heat to cool.<\/li>\n<li class=\"instruction\">In a large bowl, combine pasta and vegetables.<\/li>\n<li class=\"instruction\">Pour cooled dressing mixture over pasta and vegetables.
