As well as healthy recipes you can make using fresh produce that your entire family will enjoy.<\/p>\n<p>I was delighted to be given the duty of picking up the CSA for the week. \u00a0This week\u2019s CSA contained kale, kohlrabi, tomatoes, cucumber, and zucchini.\u00a0 My first few thoughts were, what to prepare that my one-year-old son will eat and what will I do with the kale and kohlrabi.\u00a0 Typically, spinach is my usual choice from the dark-green vegetable group.\u00a0 Adults on average need 2 cups and children need 1 cup of of dark-green vegetables a week. \u00a0It is important to eat a colorful variety of vegetables from all the sub-groups every week-dark green, red and orange, beans and peas, starchy, and other vegetables; every color has a different nutrient profile that is essential for our bodies.<\/p>\n<div id=\"attachment_12284\" style=\"width: 384px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12284\" class=\"wp-image-12284 \" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/CSA-TT-HB-300x214.jpg\" alt=\"CSA TT HB\" width=\"374\" height=\"267\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/CSA-TT-HB-300x214.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/CSA-TT-HB-768x547.jpg 768w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/CSA-TT-HB-1024x729.jpg 1024w\" sizes=\"(max-width: 374px) 100vw, 374px\" \/><p id=\"caption-attachment-12284\" class=\"wp-caption-text\">Community Support Agriculture (CSA)<\/p><\/div>\n<p>As a dietetic intern, my days have become hectic with commuting, homework, and my rotations. My family is living on a reduced income which has forced me to lower my food budget and just less time to prepare healthy meals.<\/p>\n<p>Biggest complaint I hear is\u2026 \u201cIt\u2019s expensive and takes too much time to eat healthy\u201d \u2026What can you do to reduce those barriers to eating healthy? Plan your meals!<\/p>\n<p>Meal planning is a necessity for me these days to be able to provide my family with balanced nutritious meals, and not having to eat out when I have don\u2019t have anything planned. \u00a0Meal planning saves money and time in the long run. \u00a0Eating out is expensive and the foods have more fat and sodium than what you can prepare at home. Preparing extra and freezing the leftovers will provide you with a meal when you just don\u2019t feel like cooking or short on time. \u00a0The first step in meal planning is to see what you already have at home. How many of us have cabinets or freezers full of food we don\u2019t even know what is in there? \u00a0That was me until a few weeks ago. Plan your meals on what you have NOT what sounds good.<\/p>\n<p>Now, to the CSA box. This was going to be a challenge for me!\u00a0 Making a salad would have been the easiest summer option, however it would perish quickly<\/p>\n<p>and my one-year old son can not eat a salad. Wanting to prepare something for my son I could freeze and pull out later I decided on making kale and sweet potato muffins. Including one of his favorite foods-sweet potatoes, increased my chances that he would eat kale and not even know it was in there. I also had sweet potatoes in my pantry that needed to be used up.<\/p>\n<p><strong>Toddler Friendly Sweet Potato Kale Muffins<\/strong><\/p>\n<p>1 cup sweet potato, cooked and mashed<br \/>\n1 cup kale, cooked and chopped<br \/>\n\u00bd cup cottage cheese<br \/>\n\u00bd cup whole wheat flour<br \/>\n\u00bd cup all purpose flour<br \/>\n1 egg, beaten<br \/>\n1 tsp. baking powder<br \/>\n1 tsp. olive oil<\/p>\n<div id=\"attachment_12286\" style=\"width: 299px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12286\" class=\"size-medium wp-image-12286\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/CSA-TT-HB-Son-289x300.jpg\" alt=\"Kale &amp; Sweet Potato Muffins \" width=\"289\" height=\"300\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/CSA-TT-HB-Son-289x300.jpg 289w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/CSA-TT-HB-Son-768x798.jpg 768w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/CSA-TT-HB-Son-986x1024.jpg 986w\" sizes=\"(max-width: 289px) 100vw, 289px\" \/><p id=\"caption-attachment-12286\" class=\"wp-caption-text\">Kale &amp; Sweet Potato Muffins<\/p><\/div>\n<p>1.\u00a0Boil the sweet\u00a0until soft, drain and let cool.\u00a0 Place cooled sweet potatoes in food processor and pulse a few times or place in potato ricer and press through.<br \/>\n2. Finely chop the kale, saut\u00e9 with 1 tsp till soften and bright green, about 8 minutes.<br \/>\n3. Add kale to the food processor and pulse, until desired consistency for your little one.<br \/>\n4. Mixed together sweet potatoes, kale, egg. Add flours, baking powder. Combine until flour is just mixed in. \u00a0Do not over mix.<br \/>\n5. Grease muffin pan with non-stick spray and fill half full with the batter.<br \/>\n6. Bake for 20-25 mins until golden brown. Remove from the oven let cool for 10 minutes and remove from the muffin tin.<\/p>\n<p>Success, he loved the muffins.\u00a0 They came out a soft texture which he was able to chew and self-feed.<\/p>\n<p>With the rest of the produce I made our dinner sides; kohlrabi and carrot slaw, cucumber salad, and tomatoes were used for bacon, lettuce, tomato and avocado sandwiches.\u00a0 After a request from my husband for zucchini bread, I baked zucchini chocolate chip muffins.<\/p>\n<p><u><strong>Carrot and Kohlrabi Slaw<\/strong><\/u><\/p>\n<div id=\"attachment_12285\" style=\"width: 310px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12285\" class=\"size-medium wp-image-12285\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Kohlrabi-Carrot-Slow-300x270.jpg\" alt=\"????????????????????????????????????\" width=\"300\" height=\"270\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Kohlrabi-Carrot-Slow-300x270.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Kohlrabi-Carrot-Slow-768x691.jpg 768w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Kohlrabi-Carrot-Slow-1024x921.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-12285\" class=\"wp-caption-text\">Carrot &amp; Kohlrabi Slaw<\/p><\/div>\n<p>1 large kohlrabi, peeled, stems trimmed off, grated<br \/>\n1 cup carrots, grated<br \/>\n1 small onion, grated<br \/>\n2 Tbsp mayonnaise, made with olive oil<br \/>\n2 Tbsp cider vinegar<br \/>\n1 Tbsp sugar<br \/>\n1 tsp. salt<br \/>\n1 tsp. pepper<\/p>\n<p>Combine the kohlrabi, carrots, onion in a large bowl.\u00a0 Mix the rest of the ingredients in a separate bowl, whisk to combine.\u00a0 Pour dressing over the slaw, and mix until coated.\u00a0 Chill for several hours before serving.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This article was written by Helen Bernadt, a dietetic intern from Iowa State University who is currently doing a rotation with us at Nebraska Extension in Douglas-Sarpy Counties.
