{"id":12265,"date":"2016-06-17T21:16:08","date_gmt":"2016-06-17T21:16:08","guid":{"rendered":"http:\/\/www.nutritionknowhow.org\/blog\/?p=12265"},"modified":"2016-06-17T21:16:08","modified_gmt":"2016-06-17T21:16:08","slug":"get-your-grill-on","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/b\/get-your-grill-on\/","title":{"rendered":"Get your Grill On!"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>I love grilled foods.\u00a0 They are simple to make and do not leave a mess in my kitchen.\u00a0 During the summer, or the last two weeks in Nebraska, the heat has approached close to 100 degrees everyday.\u00a0 The last thing I want to do is\u00a0 to heat up my oven and the house to make dinner.\u00a0 The grill is an excellent alternative.\u00a0 It is also a way to prepare foods and add flavor without adding a lot of fat and salt.\u00a0 Grilling can be done on a gas, electric or charcoal grill.\u00a0 It can be done in a grill pan on the top of your stove.\u00a0 It can also be done in your broiler&#8211;especially in the winter when you don&#8217;t mind heating up your house.<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-016.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-12267\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-016-300x225.jpg\" alt=\"Grilling 2016 016\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-016-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-016-1024x768.jpg 1024w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-016.jpg 1600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I registered for an open kitchen workshop at The Metropolitan Community College Institute for the Culinary Arts on grilling recently.\u00a0 This is our local culinary school, and one of the top ten in the U.S.\u00a0 I thought they might be able to help me!\u00a0 I am capable of placing perfectly good food on the grill, and it all turns to hockey pucks in a short period of time!\u00a0\u00a0These classes are offered for the general public and involve all sorts of foods and preparation skills.\u00a0 They involve a little teaching and a lot of hands on&#8211;which is what most of us need.\u00a0 My expectations were high!<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-013.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-12268\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-013-300x225.jpg\" alt=\"Grilling 2016 013\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-013-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-013-1024x768.jpg 1024w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-013.jpg 1600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Chef Bob and his two Sous Chefs were excellent.\u00a0 They put all of us at ease, and we spent three hours learning to grill all sorts of foods, including vegetables.\u00a0 They discussed adding layers of flavors to foods that you grill by adding compound butters and simple gastriques.\u00a0 Imagine grilling a flat iron steak to perfection, placing it on a plate with a reduction made from red wine, a little beef glaze, sugar and salt and pepper.\u00a0 Adding a small spoonful of citrus butter flavored with lemons, oranges, limes and garlic on top of the steak pushes\u00a0 the flavor profile over the top!\u00a0 All very simple! They all sound extremely time consuming&#8211;but they were not!<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-010.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-12269\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-010-300x225.jpg\" alt=\"Grilling 2016 010\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-010-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-010-1024x768.jpg 1024w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2016\/06\/Grilling-2016-010.jpg 1600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>We grilled eggplant and zucchini along with the steak.\u00a0 They were very simple to prepare.\u00a0 Here are the instructions to grilling vegetables:<\/p>\n<ul>\n<li>Wash vegetables thoroughly under cold water<\/li>\n<li>Slice vegetables into 1\/4-1\/2 inch slices<\/li>\n<li>Slice eggplant in circles and zucchini and summer squash into long strips<\/li>\n<li>Cut the tops and bottoms off, and leave the skin on<\/li>\n<li>Brush with canola vegetable oil<\/li>\n<li>You can season these as you place them on the grill with salt and pepper<\/li>\n<li>If you want to add more flavor, add some chopped fresh herbs, or garlic, or whatever you like<\/li>\n<li>Place on the grill at a diagonal.\u00a0 Shift a little to get grill marks.<\/li>\n<li>These items do not need to be left on the grill long&#8211;possibly just a few minutes.<\/li>\n<li>Turn and grill on the other side.<\/li>\n<li>Take off of the grill and serve.<\/li>\n<\/ul>\n<p>It is really that easy.\u00a0 You could grill peppers, asparagus, or any many other vegetables.\u00a0 Grilled fruit is tasty also.\u00a0 Try brushing pineapple slices with a little honey and cinnamon, then grill briefly.\u00a0 It&#8217;s the best dessert in the world!\u00a0 Your goal is to heat the food thoroughly without burning it.\u00a0 Watch for hot spots on your grill, and move things that take a little longer to cook to a side where it is not so hot to cook slower.\u00a0 Grill vegetables to place on a salad, or put them on a kabob for a fun meal.\u00a0 Your imagination is the only thing limiting you!\u00a0 Give your grill a try this weekend!\u00a0 You won&#8217;t regret it!<\/p>\n<p>Citrus Compound Butter<\/p>\n<p>Serves 20&#8211;you may want to cut this down.\u00a0 It does freeze well.<\/p>\n<ul>\n<li>2 # butter, softened<\/li>\n<li>1 lemon, juiced and zested<\/li>\n<li>1 orange, juiced and zested<\/li>\n<li>1 lime, juiced and zested<\/li>\n<li>2 cloves garlic, pasted<\/li>\n<li>Salt and pepper as needed<\/li>\n<\/ul>\n<p>In the bowl of a mixer fitted with a balloon whisk, add all ingredients and beat on high until well combined.\u00a0 Don&#8217;t add all the juice at once, drizzle it in so you don&#8217;t get too soupy, (or you may choose to not use it at all).\u00a0 Taste and adjust the seasoning.\u00a0 Wrap butter into useable portions with parchment or wax paper.\u00a0 Refrigerate and us within a week, or freeze for up to 3 months.\u00a0 Serve over fresh steaks, burgers and chicken.\u00a0 Recipe shared from the Culinary Institute.<\/p>\n<p>Check out local cooking classes &#8212;
