Clean your veggies with cold water, and cut them into all the same size pieces.\u00a0 This is important, as an assortment of sizes will cause them to cook at different levels\u2014and some will be overcooked, and others hard.<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-046.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-12121\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-046-300x225.jpg\" alt=\"Fall 2015 046\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-046-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-046-1024x768.jpg 1024w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-046.jpg 1600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Place them on a lipped cookie sheet and sprinkle a little (1-2 teaspoons) canola oil and seasoning over the top. I love garlic and a little parmesan.\u00a0 It doesn\u2019t take much.\u00a0 If you use a flat cookie sheet, the oil will drip off into the oven and start a fire.\u00a0 Believe me\u2014I know!\u00a0 Also, use canola instead of olive oil, as it can take the high temperatures.<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-048.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-12122\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-048-300x225.jpg\" alt=\"Fall 2015 048\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-048-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-048-1024x768.jpg 1024w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/11\/Fall-2015-048.jpg 1600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Pre-heat your oven to 425\u00b0 F and roast until done\u2014or about 45-60 minutes.
