I was not additionally\u00a0compensated for my time.<\/p>\n<p>I was born in Omaha, Nebraska.\u00a0 I married a man whose family came from Texas.\u00a0 I grew up with meat and potatoes and a HUGE garden.\u00a0 My Husband had corn bread and grits, and black eyed peas!\u00a0 In the 33 (almost 34) years we have been together, I have learned to love MANY Southern dishes.\u00a0 One of my favorites is Pimento Cheese.\u00a0 His Mom made it and spread it on celery.\u00a0 It was delightful.\u00a0 In later years, I have found it in containers at Walmart.\u00a0 It is a treat that we have saved for road trips.\u00a0 I have made it from scratch, but it tends to be pretty high in fat and sodium.\u00a0 I have found a way to make it now with lower fat cheeses and lower fat mayo, cream cheeses, etc\u2026 that still has a great flavor without all of the guilt.<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/01\/Willy-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-11210\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2015\/01\/Willy-2-189x300.jpg\" alt=\"Willy 2\" width=\"189\" height=\"300\" \/><\/a><\/p>\n<p>The one part of the recipe that absolutely needs to be followed it the part where you shred your cheese.\u00a0 If you use the shredded cheese in a bag\u2014it makes a big difference in the recipe.\u00a0 It is worth the trouble!\u00a0 Also, I have found that I can use 1\/4 less the amount of cheese if I use Cabot&#8217;s Seriously Sharp Cheddar, because the flavor is really great!<\/p>\n<div class=\"easyrecipe\" data-rating=\"#rating#\">\n<div class=\"item ERName\">Cindy&#8217;s Pimento Cheese Spread<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\"><span class=\"xlate\">Recipe Type<\/span>: <span class=\"type\">Appetizer<\/span><\/div>\n<div class=\"ERHead\">Cuisine: <span class=\"cuisine\">Southern<\/span><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Cindy Brison<\/span><\/div>\n<div class=\"ERHead\">Prep time: <time itemprop=\"prepTime\" datetime=\"PT15M\">15 mins<\/time><\/div>\n<div class=\"ERHead\">Total time: <time itemprop=\"totalTime\" datetime=\"PT15M\">15 mins<\/time><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">8-10<\/span><\/div>\n<div class=\"ERSummary summary\">Great for dips, grilled cheese sandwiches, on crackers and vegetable sticks. Mix with beaters until smooth and creamy. Chill for at least one hour before serving. Serve with crackers and vegetable sticks for dipping or spreading. This also makes an incredible grilled cheese sandwich on five grain bread! This is a wonderful and simple bowl snack that everyone loves.
