{"id":11192,"date":"2014-12-21T07:00:01","date_gmt":"2014-12-21T07:00:01","guid":{"rendered":"http:\/\/www.nutritionknowhow.org\/blog\/?p=11192"},"modified":"2014-12-19T17:15:52","modified_gmt":"2014-12-19T17:15:52","slug":"recipe-redux-celebration","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/h\/recipe-redux-celebration\/","title":{"rendered":"Recipe Redux Celebration!"},"content":{"rendered":"<p>Recipe Redux has been around for 42 months!&nbsp; Congratulations to all the nutrition professionals involved in this wonderful program!&nbsp; Every month we are challenged to do what all of us enjoy&#8211;offering suggestions for healthy foods and meals with everyday items.&nbsp; This month we were challenged to look at a cookbook and choose a recipe from page 42 or 142 and make it healthier if needed.&nbsp; My go to cookbooks for everyday foods are Better Homes and Gardens and Betty Crocker.&nbsp; They both can tell you how to make everything from pancakes to pierogis.&nbsp;&nbsp; So in my Betty Crocker Cookbook at work, page 42 was a banana bread recipe.&nbsp; One I use at home all the time.&nbsp; I do make changes to it&#8211;constantly!<\/p>\n<div class=\"easyrecipe\" data-rating=\"#rating#\">\t<link href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/12\/Banana-bread.tif\" itemprop=\"image\">\n<div class=\"item ERName\">Betty Crocker Banana Bread<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\"><span class=\"xlate\">Recipe Type<\/span>: <span class=\"type\">Quick Bread<\/span><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Betty Crocker<\/span><\/div>\n<div class=\"ERHead\">Cook time: <time itemprop=\"cookTime\" datetime=\"PT1H\">1 hour<\/time><\/div>\n<div class=\"ERHead\">Total time: <time itemprop=\"totalTime\" datetime=\"PT1H\">1 hour<\/time><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">24<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 1\/4 cups sugar<\/li>\n<li class=\"ingredient\">1\/2 cup butter or margarine, softened<\/li>\n<li class=\"ingredient\">2 eggs<\/li>\n<li class=\"ingredient\">1 1\/2 cups mashed very ripe bananas (3 to 4 medium)<\/li>\n<li class=\"ingredient\">1\/2 cup buttermilk<\/li>\n<li class=\"ingredient\">1 teaspoon vanilla<\/li>\n<li class=\"ingredient\">2 1\/2 cups Gold Medal\u2122 all-purpose flour<\/li>\n<li class=\"ingredient\">1 teaspoon baking soda<\/li>\n<li class=\"ingredient\">1 teaspoon salt<\/li>\n<li class=\"ingredient\">1 cup chopped nuts, if desired<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350\u00b0F. Grease bottoms only of 2 loaf pans, 8 1\/2&#215;4 1\/2&#215;2 1\/2 inches, or 1 loaf pan, 9x5x3 inches.<\/li>\n<li class=\"instruction\">Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.<\/li>\n<li class=\"instruction\">Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1\/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing.
