feast or famine&#8211;and right now it&#8217;s FEAST!!!!\u00a0 I picked up and incredible bag of produce from <a href=\"http:\/\/www.wenninghoff.com\/\" target=\"_blank\">Wenninghoff&#8217;s<\/a> CSA, and my garden is producing like crazy.\u00a0\u00a0 I brought in all of my goodies and cleaned everything up&#8211;there seemed to be no more room in my kitchen to place any more delectable veggies!\u00a0 So, by process of elimination, I started using them!<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/9.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-10783\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/9-300x225.jpg\" alt=\"9\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/9-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/9.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I have been eating tomatoes on everything&#8211;chopped with cucumbers and a little low-fat ranch is great!\u00a0 On top of a slice of Italian bread with a little melted cheese is called lunch in our house!\u00a0 By themselves with a little flake salt works!\u00a0 On any sandwich or grilled cheese works too?\u00a0 What a great source of Vitamin C.\u00a0 Pico and salsa are also family favorites.<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/10.jpg\"><img loading=\"lazy\" decoding=\"async\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>My family likes green beans steamed.\u00a0 To death.\u00a0 Really.\u00a0 I learned while in college MANY years ago that vegetables should be crisp, yet tender.\u00a0 Not so much with my family.\u00a0 I like them in soups and stews and roasted with a little balsamic vinegar too!\u00a0 More on roasting later.<\/p>\n<p><a sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>My son loves to garden&#8211;and is always picking fresh produce for me.\u00a0 Our cucumbers are starting to die&#8211;but still getting enough for salads and to eat by themselves.\u00a0 A little bit of Ranch on them is good too!\u00a0 Potatoes did terrific this year.\u00a0 I placed some smaller ones in a foil wrap and placed them on the grill with a little garlic and olive oil.\u00a0 They were terrific.\u00a0 Placed in the crock pot with fresh rosemary and a little teriyaki glaze and garlic is terrific too!<a sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Beets, squash and melons&#8211;oh my!\u00a0 We like beets cooked or roasted in a hot very with a little bit of oil and seasoning.\u00a0 It brings out their incredible flavor.\u00a0 Squash chunked and roasted the same way is also great!\u00a0 Melons by them selves are so sweet!\u00a0 Have you tried chunking them up and freezing them.\u00a0 Serve over yogurt!\u00a0 So good!!<\/p>\n<p>Eggplant is doing well along with zucchini.\u00a0 I love shredding my zucchini and freezing it for use later this fall, or making zucchini boats with stuffing in the middle in the oven.\u00a0 They taste so great!<\/p>\n<p align=\"LEFT\">Here are two recipes you will love.\u00a0 The first one is from the Penzeys catalog&#8211;it&#8217;s <a recipe!\u00a0 The other is for the <a href=\"http:\/\/www.recipe.com\/teriyaki-potatoes\/\" target=\"_blank\">Teriyaki Rosemary Potatoes<\/a>.\u00a0 I love this in the crockpot.\u00a0 It tastes so
