{"id":10756,"date":"2014-08-27T19:55:04","date_gmt":"2014-08-27T19:55:04","guid":{"rendered":"http:\/\/www.nutritionknowhow.org\/blog\/?p=10756"},"modified":"2014-09-12T19:07:26","modified_gmt":"2014-09-12T19:07:26","slug":"pinterest-recipe-review-stuffed-banana-peppers-zucchini-boats","status":"publish","type":"post","link":"https:\/\/nutritionknowhow.org\/blog\/d\/pinterest-recipe-review-stuffed-banana-peppers-zucchini-boats\/","title":{"rendered":"Pinterest Recipe Review &#8211; Stuffed Banana Peppers &#038; Zucchini Boats"},"content":{"rendered":"<p>Do you actually make the recipes you pin from Pinterest?\u00a0 I&#8217;d say I\u00a0make at least 50% of the recipes I pin.\u00a0 The majority of the recipes that I make, I\u00a0do plan on making\u00a0them\u00a0again.\u00a0 For this weeks post I wanted to share and review two of the recipes I found on Pinterest that\u00a0include garden fresh produce that is in season: banana peppers, and zucchini.\u00a0 The first recipe I made was stuffed banana peppers.\u00a0 At our office we have a garden where we grow banana peppers, bell peppers, beans, corn, winter squash, eggplants, tomatoes, and herbs.\u00a0\u00a0The garden\u00a0gives us a fun opportunity to experiment with\u00a0recipes using vegetables.\u00a0 Recently we had\u00a0a lot\u00a0of banana peppers that were ready to be harvested.\u00a0\u00a0With these I made\u00a0Stuffed Banana\u00a0Peppers.\u00a0 I\u00a0baked them in the oven\u00a0but they could be cooked on the grill as well.\u00a0 Make sure to put them on aluminum foil if you grill them.\u00a0 These were a hit, especially with my husband.\u00a0\u00a0I will be making this recipe again.\u00a0 For more great stuffed vegetable recipes check out UNL Extension Associate, Nancy Urbanec&#8217;s\u00a0post, <a href=\"http:\/\/www.nutritionknowhow.org\/blog\/e\/stuffed-csa-bag\/\" target=\"_blank\">Stuffed CSA Bag<\/a>.<\/p>\n<p>The second recipe I made from Pinterest this week, was Taco\u00a0Stuffed Zucchini Boats.\u00a0 The\u00a0link to this recipe is\u00a0below.\u00a0 I was so excited with how well these turned out.\u00a0 I did add an extra ingredient to the recipe after it was done, Sriracha.\u00a0 If you haven&#8217;t heard of Sriracha it is a hot sauce and is very popular right now.\u00a0 It added a great kick to the recipe.\u00a0 This was another recipe I plan to use again.\u00a0 If you ask, I&#8217;m sure one or\u00a0your friends\u00a0or family has\u00a0extra zucchini they&#8217;d love to give you.\u00a0 If you make these recipes please share your likes and\/or modifications.\u00a0 Or if you\u00a0have other garden fresh veggie recipe that are crowd pleaser, please share via the\u00a0comment section.<\/p>\n<div class=\"easyrecipe\" data-rating=\"#rating#\">\t<link itemprop=\"image\" href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/bananapepper11-300x175.png\" \/>\n<div class=\"item ERName\">Stuffed Banana Pepper<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERSummary summary\"><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/bananapepper11.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft  wp-image-10759\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/bananapepper11-300x175.png\" alt=\"suffedbananapeppers\" width=\"365\" height=\"213\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/bananapepper11-300x175.png 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/08\/bananapepper11.png 640w\" sizes=\"(max-width: 365px) 100vw, 365px\" \/><\/a>A great way to get even the most picky vegetable eaters to try something new.<\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">4-6 banana peppers<\/li>\n<li class=\"ingredient\">1 cup whipped cream cheese<\/li>\n<li class=\"ingredient\">2 tablespoons green onion, diced<\/li>\n<li class=\"ingredient\">1 teaspoon oregano<\/li>\n<li class=\"ingredient\">1 teaspoon thyme<\/li>\n<li class=\"ingredient\">\u00bd teaspoon seasoning salt<\/li>\n<li class=\"ingredient\">\u00bd teaspoon black pepper<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Preheat oven to 375 degrees F<\/li>\n<li class=\"instruction\">Rinse and dry peppers.<\/li>\n<li class=\"instruction\">Remove the stem. Make a slice lengthwise down one side of the pepper.
