Cooking!"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>This month\u2019s Recipe Redux theme is using spirits in food preparation.\u00a0 Who doesn\u2019t LOVE that!\u00a0 I was thinking of all of the ways to use wine and alcohol\u2014and how it added another layer of flavor to things I prepared!\u00a0 My first thought went to homemade vanilla.<\/p>\n<p>I\u2019m not talking about your $1.00 bottle of vanilla flavored extract\u2014I\u2019m talking <em><strong>REAL<\/strong><\/em> vanilla.\u00a0 The kind you pay $9 for a small bottle of.\u00a0 It makes heavenly dishes, and even makes every day oatmeal taste like a million dollar treat!\u00a0 There are many recipes for homemade vanilla\u2014involving vodka or bourbon.\u00a0 I like to use rum!\u00a0 All will work.\u00a0 The \u201crecipe\u201d states using 3 vanilla beans for every 2 cups of alcohol.\u00a0 I purchased my beans from Penzey\u2019s Spices\u2014and they were HUGE!\u00a0 So I determined that they would equal 4 cups of rum!\u00a0 I sterilized a quart jar, and mise en place all of my materials.\u00a0 I cut the vanilla beans down the middle, and then cut them in half so they would fit in my jar.\u00a0 I decided half way through to change jars to a wider mouth lidded jar (even though it has Halloween decorations on it\u2014it works!).\u00a0 I poured rum over the beans in the jar until it was full (just happens to hold 4 cups!).<\/p>\n<p><a href=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/07\/Vanilla-003.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-10604\" src=\"http:\/\/www.nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/07\/Vanilla-003-300x225.jpg\" alt=\"Vanilla 003\" width=\"300\" height=\"225\" srcset=\"https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/07\/Vanilla-003-300x225.jpg 300w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/07\/Vanilla-003-1024x768.jpg 1024w, https:\/\/nutritionknowhow.org\/blog\/wp-content\/uploads\/2014\/07\/Vanilla-003.jpg 1600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Once it is prepared, it has to sit until totally cured\u2014it is recommended two months.\u00a0 At that time you can pour it into a decorative jar to use.\u00a0 I like to place it in a jar that pours well so I do not drip any of the precious liquid!\u00a0 Give it a try\u2014you\u2019ll really taste the difference and become a class=\"wp-caption-text\">Picture from &#8220;My Home Spun Home.&#8221;<\/p><\/div>\n<p>Another quick idea with wine is to deglaze the bottom of a pan with a small amount of wine.\u00a0 I like to do this with my pot roasts.\u00a0 It adds a level of flavor to the juices that cannot be beat.\u00a0 A wise wine professional told me to only use wine I would drink to do this.\u00a0 I agree.\u00a0 I love sweet wines\u2014and they work very well with meat and even a splash in seafood dishes!\u00a0 Enjoy!<\/p>\n<p><a
