Cindy’s Version of Martha’s Bread!
You know its summer at our house when I do not use the oven.
This summer, it has been at least 95 degrees for the last month, and most days closer to 100! It looks like more of the same for the next month according to the weather man. I hate heating up my house with the oven when the air conditioner is working so hard, and we like lighter meals in the summer. One of our favorite quick meals is a variation of something we saw Martha Stewart do on television 12 years ago.
Martha buttered and “garliced” crusty bread slices. We used ciabatta bread this weekend, and it was wonderful. Crusty Rotella rolls are great too! She placed the bread under a broiler to toast them with the garlic butter first. We toasted them in a toaster oven (does not heat up my kitchen!). Placing them on the grill gives them a whole other flavor–so try it also. Sorry–I digress. Then she sprinkled them with shredded cheese. I’m not talking plain old cheddar. She used a specialty cheese. We prefer smoked Gouda or finely aged cheddar. Asiago or real grated Parmesan is also great! She then placed them under the broiler to melt the cheese.
Once the bread has been grilled twice (to melt the cheese the second time), you place fresh sliced tomatoes from the garden and a sprinkling of basil on the top—and enjoy! I serve this with fresh fruit or a salad! It’s the bomb! So simple, even my kids can do it! Sorry—no recipe—just a vision of wonderful flavors!
