Nutrition Know How is an educational blog, developed by UNL-Extension food and nutrition staff in Douglas/Sarpy County, with relevant and practical food and nutrition articles posted in reverse-chronological order.

We find blogging a creative way to reach people with the great scientific knowledge and resources we have regarding eating and making it practical. Our goal is to help people find ways to eat healthy on a daily basis in an informal and personal way. We enjoy providing specific tips for individuals to improve their lives. You can be confident that what staff write about is tested in their own households… from slow cooker meals to dining out on a budget.

About Us


CARRIE

Carrie has a special interest in prenatal and child nutrition. She is expecting child number two and is feeding a child at home, and finds that the media and food industry can be complex and confusing when it comes to nutrition information. Carrie’s articles do a wonderful job of empowering people to live the lifestyle of “all foods fit”. Carrie is a Registered Dietitian with a Master degree in Nutritional Science and Dietetics and a certified personal trainer through American Council on Exercise. Employed by the University of Nebraska-Lincoln Extension Nutrition Education Program teaching limited resource audiences.

CINDY

Cindy shares her passion of food safety and preparation with many touching and humorous moments that occur in her ever changing and hectic life. Cindy’s articles frequently enlighten people on ways to handle their food in a safe manner to keep food borne illness outbreaks from occurring. Cindy has been in the nutrition field since 1989. She has a Master of Science degree in Home Economics with a major in Community Nutrition. She also has a Bachelor of Science degree in Home Economics with a major in Dietetics.

JOAN

Joan has a particular interest in helping families eat healthy. With the birth of their first daughter, the reality of how eating healthy could easily fall to the wayside for a healthy family became apparent. Joan’s articles often focus on ways to make healthy eating easier because if it’s easy, we’re more likely to do it. Joan is a Registered Dietitian with a Master of Public Health from the University of North Carolina at Chapel Hill. Member of the American Dietetic Association, the Omaha District Dietetic Association, the Weight Management Dietetics Practice Group, and the Society for Nutrition Education.

NANCY

Nancy’s knowledge of food preparation and safety are evident in her selection of postings for the blog. She enjoys taking ingredients and preparing dishes that her family will find tasty yet nutritious. Nancy wants to show you how to make your time in the kitchen easy and enjoyable.  Nancy brings twenty years of Food Safety and Nutrition experience to the University of Nebraska-Lincoln Extension Service. She holds a degree in Family Consumer Science and Secondary Education from Wayne State College. She is an Extension Associate Assistant for UNL-Douglas/Sarpy County.
